Re: No Mash No sugar
Yes I’ve done about half of mine as no-boil with the addition of combo amylase. I’ve also done fully boiled corn with enzymes prior to pitching Angel. Angel works just fine by itself (effort vs yield vs time) if you can mill fine and gelatinise the starch (which is easy with most grains). I didn’t l...

Same for me, 12-16kg per 60lt ferment gives a 50lt boiler charge.

Re: No Mash No sugar
I am very interested in the results of your spent UJSSM run NZC. Angel Yeast Starter worked well for me on rolled barley (my first AG mash). Will soon have multiple generations of UJSSM corn and Odin's Rye Bread residue to be gainfully employed. Could combine as you did with rolled barley. Looking ...

Re: No Mash No sugar
On, no, I guess we can expect a run on Angel Yeast... Haha yep. Hopefully someone will stockpile and sell out of Aus without gouging. I can buy Angel yeast in several local shops at a keen price if I want to make bread or UJSSM, but I've not found a seller for Angel Starter of Liquor Making i...

Re: No Mash No sugar
26kg of cracked corn milled fine. I poured in 90* water and insulated... I let it sit for 3 days. Then I sparked up my boiler and drove steam into it for several hours. It amazes me how much you have to punish this stuff to get anywhere near gelatinisation. Realize it may add significant time to fe...

Re: No Mash No sugar
So this smells much sweeter and has a decent potency as it is fermenting. Could it be that it continued to convert over night after I put in the gluco? I use an alpha/gluco combo pruduct. I let it rest at around 70c in an insulated vessel for however long it takes to fall to around 50c. It gets swe...

Hi all, I just made a smallish batch of this and I’m finding it very enjoyable. 1/3 each: Unmalted.. Triticale Corn Barley For a 60lt wash 4kg of each grain milled very fine. Total 12kg. Corn goes in first, use your preferred method of gelatinisation for the cursed kernel. I go for very long hot soa...

Re: Liebig tube sizes
Hard to answer the original post without some specifics but I like build stuff that I can grow into if need be. I have 4800watts and use an asthmatic aquarium pump recirculating 200lts from a drum. I went with 40” jacketed 1” over 3/4” with copper braid spiraling through the jacket. I connect that t...

Re: No Mash No sugar
What a great tasting spirit...guess I know why I like single malt so much. Yeah  Of my experience, unmalted barley grits (oven-"fried") + liquid smoke (while cooking grits) + Angel koji = the best combination. First month it is a bit strange (not ugly, just sorta pine-tree flavor...

Re: No Mash No sugar
I put on a wash of whole steamrolled barley (husk on) a couple of weeks back. It’s been slowly working away and I’ve given it bicarbonate interventions a few times. I ran it last night and it worked quite well. Didn’t measure very closely but a bit lower yielding than the other grains probably due t...

Re: No Mash No sugar
This is from a corn ferment: Gelatinized with 85C water. Pitched at 31C, fermenter put in a 31C incubator. 11 hours, SG 1023, stirred. 20.5 hours, SG 1012, stirred. 36.5 hours, SG 998, stirred. From this point on, the SG never changed, but the refractive index rose at every daily check up to 155hrs...

Re: No Mash No sugar
I’ve had mixed results so far from mixed methods. 1. Cracked corn, no mash, no soak, no grind. Just hot water to sterilise. Epic fail. Looked really good, went for 3 weeks. In the end smelled awful and produced 600ml from 60lt wash. Angel only 2.Triticale. Ground fine soaked in 56-65c water for 45mi...

Re: No Mash No sugar
I’m a noob too, especially with grain so I’m just covering all the bases at the moment. I have unmashed, mashed but unconverted and converted washes on the go. At he very least the angel offers insurance for someone learning the ropes with grain. So far it’s at least competitive and has made a coupe...

Re: No Mash No sugar
I ran my triticale wash a couple of days ago. Got about 5% abv and it’s one of the cleanest things I’ve made so far. During the strip it seemed there was very little in the way of heads. It yielded a very mild and delicious wine, so I have high hopes for the spirit. Onto the next one. I wanted to tr...

Re: No Mash No sugar
Hey Vlagavulin, Thanks for that. Yes the yeast does it’s thing and the included enzymes don’t multiply, but I was under the impression that the rhizopus shits enzymes as it does it’s evil also. Just that they are not being shat at the most opportune time as far as not being at mashing temp and PH. T...

Re: Holding kettle temperature to affect distillate flavour
Bumpity. I just made my first bourbon. It’s about 65% corn 20% wheat and a everything else in the shed makes up the rest. I heated up the keg late in the night til’ I’d taken maybe 150ml of heads. At that point I looked et the clock and started to have second thoughts about stilling through to sunri...

I just put down a 50ish litre wash for the Angel yeasties to eat. 11.4kg total 7kg corn 2kg wheat .7kg triticale .7kg oat. .5kg barley .5kg Gambrinus honey malt I had to use a blender so it’s between talcum powder and polenta (bit of both). I poured a 25lt boiler of 90c+ water on and left it for 30...

Re: No Mash No sugar
That makes sense, I guess I'm trying to walk a line between yield and arsepain in the racking/stripping.
What are your thoughts on the whole grains of rolled barley? Looks like the grains have largely swollen up and split the husks ..also very soft and gelatinous.

Re: No Mash No sugar
I confess I’ve been worried about the coarse cracked corn not yielding well but it is softening right up and can be turned to paste with light pressure between the fingers. The Rhizopus (from my yeast ball experiments) seems to step up and shred the grains a bit later in the ferment... The 100% trit...

Re: Does unmalted triticale have diastatic power?
So I got my big bag of triticale. I made a 55lt wash with 12kgof trit. I poured in hot water and let it sit around 62c for 45 mins or so...I wanted to gelatinise it for a nice quick ferment and to kill any badyeasties. I kept on tasting the mash. It just kept getting sweeter...interesting. I pitched...

Re: No Mash No sugar
My bourbon style wash is close to done. Is somewhat sour. Can’t wait to run it. The corn is going nicely, but due to the coarseness of the crack I think it’ll take a while...only been 4 days though. Last night I blended 12kg of triticale to flour, sat at 56-62c for 45 mins and then watered down to 5...

You might be right Bill, I did stir up the trapped gases just beforehand too.. Though the resumption of obvious fermentation happened straight after the bicarb addition.
Here's the corn doing it's thing. Snap, crackle, pop!
