Re: Absinthe questions

Genepi. What other names does this go by, what does it bring to a flavor profile, and are there any affordable substitutes? Absintheherbs.com seems to carry it (site seems to have updated, so I assume it's operational), but it is far from cheap. I found seeds for sale elsewhere under the shared tit...

Re: [In Progress] Maceration: The Amaro, Bitters and Vermouth Thread

A few more :D, Minus the couple of recipes that would outright poison you. The formatting here didn't turn out that great, the first number is for the original recipe qty, the second for the qty scaled to a ca. 1L batch Bitter d'Olanda 20L 1L Orange Peel 150.00 7.50 Bitter orange Peel 50.00 2.50 Cal...

Re: [In Progress] Maceration: The Amaro, Bitters and Vermouth Thread

I was a bit suspicious of that too.. I had another look at the recipe and it states "21/2 Liter" (Unscaled qty). It seems obvious now that probably means either 21-22 or 21.5L so I'll have a bit of a recalculate. I guess I had one two many Amaro sours when I was translating it from Italian...

[In Progress] Maceration: The Amaro, Bitters and Vermouth Thread

I've been trawling through books and the depth of both this forum and the internet for leads on how to get a few batches of Amari etc on the go, along the way hopefully learning more about the various botanicals involved. Given that I'll probably never get through testing the trove of recipes I've f...

Re: Exploding absinthe..

Interesting points Re cogeners and cuts. My spirit finally arrived, I have some various Bitters on the go for the moment with most of it, still pieceing together the last bits for my still and sourcing the botanicals I can't find in my area for Absthine etc. I've seen at least Angelica, Fennel and G...

Re: New Kiwi

Welcome to the forum. You very possibly have access to ingredients that we can never hope to obtain in NZ, so I hope you are able to make use of them. Cheers Chris That's interesting, what kind of stuff is hard to get hold of back there? I'm kicking myself for not starting this hobby when I still c...

Re: Exploding absinthe..

Thanks for the advice!
I've used the brand's wine spirit before for a few non distilled liqueurs and it seems quite good, I'll have a more in depth tasting when the next lot arrives.

Do you mean that Duplais is referring to proof instead of %?

Exploding absinthe..

I've been lurking longer than I've been a member here and have read the newbie section and unless I'm completely inept at using the search function, I still haven't found the answer to the following questions  I'm more interested in making liqueurs from high proof spirit then I am as fermenti...

Dark Creme de Cacao

I've made this a few times, the result is a bittersweet Cacao liqueur that's really good on ice cream or in cocktails where colour isn't important Makes ~750ml @ 25% Maceration: 256ml 96.5% Spirit, preferably grain 160ml Water 198g Cocoa nibs 1tsp Vanilla bean paste Simple Syrup 150g Sugar 150ml Wat...

New Kiwi

Hi guys, I'm a kiwi living in Germany and am keen to get amongst making up my own liqueurs and flavoured spirits. I've been lurking for a while and figured its high time that I joined properly.
