I mis-read and thought you were talking about a system WITH steam injection, my mistake! Yeah I agree that on a reboiler setup you would be sending over more flavour if you boil the effluent as you suggest.

Effectively diluting with sending over more steam won't bring over more flavour in the same way that stripping longer on a pot still would. Recirculating a percentage of the bottoms back into the wash feed might have a similar effect though.

You will have a different flavour profile between column and pot - it's a different tool and process. I think one of the big differences is going to come from the time that the wash spends being heated. In a pot, everything is boiled for quite some time, and you get all sorts of reactions - maillard...

How long you planning to age? You could try a second-use barrel.

Your bigger issue will be balancing the oak flavour in general with the time in the barrel; you will have that same issue whether you age in European or American oak.

Also I think the 50% output is just a figure from the VLE curves - e.g. for a fixed input abv, a single stage of distillation is what defines the output abv. He's running 6kw, and about 3 l/pm, in other videos it shows him making the mash. He does a wheat flour vodka. That's about 180l per hour, maybe 3x the rate we might expect if we take the 400w/g/h! It's JUST bigger than a hobby in a shed, but not by much. The direction of cashflow is still the same as it would be for a hobbyist ;). I don't ferment on the grain, as the time and mess involved is not worth it IMO - I have to separate before distillation, and it's easier just to run out of a mash ...

Shady - often there's an option to auto-translate and generate subtitles. At the time of writing, for me I click 'settings' in the bottom right, and then under the subtitles/captions section I have the option for Autotranslate.
