Aspergillus Orayzae - koji, or other aspergillus fungi. Already used for conversion in making sake, but can be found on - Onion Skins (ever see some black dust on your onion? That's probably Koji!) Corn (Maize) Skins - The green leafs surrounding an ear of corn. I've seen an experiment where little...

Re: Juicing potatoes
Potato vodka is really delicious, but less common as the yield from potatoes is less - so most producers prefer grain. There's a vodka museum in Warsaw where one can taste potato, rye and wheat vodkas side by side (all from the same producer). Luksusowa is a brand that I think their base vodka is fr...

Re: A history of distillation in France (and elsewhere).
Great stuff Normandie! aqua ardens (lit. Strong water from my limited latin) i I think this is more like 'burning water'. We have 'aguardente' in Portuguese, which is clearly derived from 'agua ardens' and also has that meaning (water that burns, or burning water). This tiny detail is just for the p...

Unofficial Member of the year 2024 - Particular thanks
I don't know if this exists, - but I want to tag a couple of members here who I think really contributed a lot to the community last year; maybe if people like the idea you can do the same. I think two members keep popping up and giving great insights in all the threads I seem to be browsing - so pa...

I was trying to get my head around why we load different fractions where into these thumpers in terms of cuts and boiling points - maybe this is obvious to the quicker ones of you but it took me a while to think of this, so wanted to share it, and get feedback as to the accuracy of this mental 'mode...

Re: Building a 2” stripper pole
I mis-read and thought you were talking about a system WITH steam injection, my mistake! Yeah I agree that on a reboiler setup you would be sending over more flavour if you boil the effluent as you suggest.

Re: Building a 2” stripper pole
Effectively diluting with sending over more steam won't bring over more flavour in the same way that stripping longer on a pot still would. Recirculating a percentage of the bottoms back into the wash feed might have a similar effect though.

Re: Building a 2” stripper pole
You will have a different flavour profile between column and pot - it's a different tool and process. I think one of the big differences is going to come from the time that the wash spends being heated. In a pot, everything is boiled for quite some time, and you get all sorts of reactions - maillard...

Crazy - where I am in Europe expanded clay runs at about 90euro per cubic metre - or 40c per US gallon! 50 litre bags go for about 5-7euro! Maybe the first time I come across something significantly cheaper here :D. I playes with it in a column for exactly the reason it is VERY hard to beat, price w...

Re: New Condenser Calculator
Thanks for the quick response Haggy - I had recently been toying with something similar, but to work out how much a product condensor would heat incoming wash in a continuous. In this case, could a simulator such as yours be used, but rather than using the heat capacity of water as the coolant, inst...

Hi Haggy,
Thanks for this, it's brilliant!
Are you able to give any reference or information about the type of model that's being used to do these calculations? How would one go about working something like this out?
Cheers

Re: Steam continuous stripper idea
Hi Bolverk - If the aim is simplicity, and that asks for a no-moving-part fixed capacity one-fill steam generator, you can also explore this really simple idea from Dr Gradus. (See around the 5 minute mark). https://youtu.be/8H0zFPV7QeI?feature=shared&t=292 Essentially the column is over the boi...

Re: European Oak barrel
How long you planning to age? You could try a second-use barrel.
Your bigger issue will be balancing the oak flavour in general with the time in the barrel; you will have that same issue whether you age in European or American oak.

Re: Steam continuous stripper idea
Also I think the 50% output is just a figure from the VLE curves - e.g. for a fixed input abv, a single stage of distillation is what defines the output abv. The idea of the stripping column is not to do any further enrichment or increase in ABV, that would be for a rectification section that comes ...

Re: Steam continuous stripper idea
I agree that actually running at that balancing point would be tricky. Rather, I was thinking that these things obviously do work, because some people have done it. But it may be that they’re pretty close to the limit beyond which supplemental cooling is needed. 6% beer input is not that crazy a nu...

He's running 6kw, and about 3 l/pm, in other videos it shows him making the mash. He does a wheat flour vodka. That's about 180l per hour, maybe 3x the rate we might expect if we take the 400w/g/h! Sorry to derail the thread - I was searching for more info because his setup looks great and you seem...

I should have put more labels on the drawing, my bad. Bolverk mate, you are in no way obliged to present this in a way that I am able to understand it, please don't feel bad at all! Hi @Bolverk, could you elaborate on this This design also as a "non-return" as the steam entry is above the effluent drain. You'd need to get one of these from SD or make your own. - In the piece you showed a picture of, there is no moving parts, is that correct? The waste liquids simply f...

Re: Steam continuous stripper idea
Hey I really hope this comes off - I have been thinking about the steam feed for continuous strippers quite a lot. I played with a couple of continuous columns, and always had issues with the wash exit surging, but I was directly heating the wash which led me to look at steam - and followed and enjo...

Re: Yield on Malted and Unmalted Grain
It's JUST bigger than a hobby in a shed, but not by much. The direction of cashflow is still the same as it would be for a hobbyist ;). I don't ferment on the grain, as the time and mess involved is not worth it IMO - I have to separate before distillation, and it's easier just to run out of a mash ...

Hi Dr Griz - Great timing - I'm going to mash about 140kg of unmalted wheat tomorrow, so I'll try to take some proper measurements that are hopefully useful to you, me and everyone else. Anecdotally - I always felt that the yield was less than I 'expected' if I took brewer's malted barley as a benc...

Shady - often there's an option to auto-translate and generate subtitles. At the time of writing, for me I click 'settings' in the bottom right, and then under the subtitles/captions section I have the option for Autotranslate.
