Canned fruits have little to no flavor dont waste ur time.
To get the full peach experience dont throw the skins add a few seeds too, you need all the flavors when u strip it.
distill on fruits add fresh peaches to the thumper if u have one.
and then do a slow spirit run.

hawkwing grapes is more complex but the date flavor is truly unique.

I have 4 pounds of preserved dates. What should I do with them? it wouldnt be enough to make a large batch. i'd soak em in high abv rum I think I’ll scale down your process and use my little gin pot to run it. It will be fun and I’m okay with the small yield. Thanks. me too. let me know when ur done

Nice experiment, here in Italy that stuff is very expensive for a certain amount. I usually make a fig brandy, then I put some dehydrated figs in the white spirit, it tastes great, you could try to do the same on a small amount its so good i dont want to add anything to it. i'v been meaning to make...

Nice story. Starting with the free dates. How do you know it had much methanol? Why not put the heavy pulp in a thumper and run it with water in the boiler? Gives you all the taste and all the alcohol. it tasted like paint thinner for a while. i dont have a thumper so i distilled with the heavy plup

Welcome Rob. i'd say start with sugar shines to practice and feel your still. you need a sacrificial run anyways
i wouldnt recommend drinking from a new still.

this is my 3rd time doing this recipe and im impressed with the result even with white sugar
its still smooth and complex. Kellogg's corn is really high quality stuff!
i'd say 1k, 5 gallon of water is best. adding oats or wheat will help smooth out the sugar bite.

All the fruit woods I've used just seem to be a little smoother than just oak on finished product. If I did add a little too much heads then it seems to help mellow them out , especially for brandies. im a fan of keep the heads they have so much flavors. i'll give fruit woods a shot. thanks Nice bo...
