Re: Buccaneer Bob's Silver, Gold, and Black Rum Recipe
So...I have a T500 with copper alembic dome and arm. In the bottom of the boiler, I have ceramic boil enchancers and copper olives (the latter used to emulate a copper boiler). I've left this dunder in situ for three days (was working shifts, and did not get the time). I've emptied the boiler now, b...

Re: Buccaneer Bob's Silver, Gold, and Black Rum Recipe
So I'm looking at doing a run of this if I can. I'll be making a dunder pit from the backset of a wheat whisky stripping run and I have a litre of the trub from the same in a bottle ready for use. The molasses have been ordered. Just going to have to accept that in order to do the spirit run, I'll ...

Re: Buccaneer Bob's Silver, Gold, and Black Rum Recipe
I take it this scales up volume wise? I have done two batches, producing 10L of low wines. When I do the spirit run, and dilute the low wines. I am right in thinking that the Foreshot/Heads cut is 2L? Or is it advisable to run two seperate spirit runs? It's up to you. I've run double batches and en...

Re: Buccaneer Bob's Silver, Gold, and Black Rum Recipe
I think the direction is for strip then spirit, on the carbon filter I wouldn't personally do that as it will remove a lot of flavor, that is the point of the pot still. Haven't tried to carbon filter a rum so can only offer up a bit of what I think you should do and I want a spirit that tastes goo...

Re: Buccaneer Bob's Silver, Gold, and Black Rum Recipe
Hi, got a couple of batches coming up to finish. But thought I would knock out some questions, before finishing my rum. Just for the record, I'll be using a T500, with an Alembic head. 1.mentioned earlier in the posts, someone said you have to run it through the pot still at least twice. Is that inc...

Banana Dunder
Hi, I am looking at making Buccaneer Bob's Rum. On on of the generations, I was thinking of making a second live dunder pit and chucking in chopped banana inc skins. I was wondering if the esters from the banana would transfer in fermentation, and enhance the flavour once distilled. Advice, opinions?

Re: Yeast Harvesting
With ujssm why not just start a new gen on top of the yeast cake I normall do, but at the time I was trying to finish it off at that time and store the yeast. I made a loaf of bread with the gathered yeast, and it turned out good. I've now decided to start another batch, using the harvested yeast, ...

Yeast Harvesting
Hello all! Recently I ran five generations of UJSSM, using Still Spirits Distillers Whisky yeast. I've frozen all the backset for a future project, and decided to harvest the the yeast to two jars (2ltr clasps). Making sure I have mixed bottled water with each jar, and then cold crashing them in my ...

Getting Mashed
Ok, just as a mental exercise before I leap fully into creating my first mash. I have a converted watercooler with a ball valve tap. It holds 25L of liquid as my mash tun. My grain bill is: 5.5 Kg of flaked corn 0.5 Kg of rolled oats 0.5 Kg of Dark munich malt 3.0 Kg of Pilsner Malt My strike water ...

Re: Alpha-amylase UK
This link is theoretically dissolved during mashing by the enzyme limit dextrinase which is in the malt but is deactivated at lower temperature than the typical mashing temperatures. I correct myself, limit dextrinase is still showing 60% activity at 65 °C kept for an hour. Which means that unless ...

Re: Alpha-amylase UK
@Reaverman For some reason, I cannot see the Amazon link, I only see an Amazon logo. Try putting the ASIN number. Yes glucoamylase is way better than alpha amylase for distillers. Alpha-amylase dissolves the 1-4 link but it is not able to dissolve the 1-6 link of Amylopectin which is one of the con...

Re: Alpha-amylase UK
Is the Alcotec Whisky strain like the Still Spirits Whisky Yeast? I have no idea, but Alcotec Single Strain Whisky Yeast contains glucoamylase which is very good in obtaining 100% conversion of the starches in the mash. Still Spirit doesn't make any mention of their strain containing glucoamylase, ...

Re: Alpha-amylase UK
You might have better fortune looking for yeast Alcotec Single Strain Whisky Yeast, maybe that is available in the UK. That contains glucoamylase which, for distillers' purposes, is better than alpha-amylase. Spoke to Lovebrewing, and they said there is a shortage but should be seeing stock in the ...

I bought some from a Polish site. https://destylacja.com/enzym-gorzelniczy-uplynniajacy-50ml.html Got a bottle of alfa amalyse and a bottle of gluco amalyse (and some other little accessories to take me over their minimum order amount). Was delivered to France in about a week I think. Not tried it ...

Re: Consolidating faints
IMHO, an all feints run should be done with a reflux rig with the goal being neutral alcohol. I put it all together and just run it when I get to a full boiler charge (diluted to not more than 40% ABV). My experience is that there will be a bigger heads cut but with enough hearts to make it worthwh...

Consolidating faints
Hi,
I'm right in thinking that with regards to storing faints. I can put whisky/Vodka/Rum faints in one jar, and my Gin faints in another jar? I just think storing the entire lot in one jar, would create one hell of a bizarre run later!

Re: Rye bread whiskey
I have done that. After a couple gen's you gotta remove some of the bread trub, as it's eating into valuable liquid volume space! The hot backset kills the yeast, but they get gobbled up by the new stuff you add when it cools... I've not done this as a vodka, but mostly because I love rye whiskey (...

Regarding the Rye vodka recipe.
I've done two gens of the whisky, switched to Vodka (where you just top up with water and sugar). Can I repeat this process, with the old bed/yeast and add backset?
