2 Year bourbon with "Quantum Aging"
Hello All, After a year of learning and trials from help of the community i've gotten my general white / clear spirits down *atleast to what I like. Thinking about jumping into brown finally and have my hand at it. I've looked a the aging sticks to at least give me a start of seeing how flavor devel...

The angel yeast says to stir the ferment. What is a safe way to do it without introducing anything bad?

Re: Condenser Cooling Water
I don't have a direct access to sink/drain and need to move the water manually during the runs. So what I do is letting the hot output from worm condenser to back in the ice bucket which I collect the cool water via an aquarium pump. The hot water I'm letting in the ice bucket doesn't drastically i...

Condenser Cooling Water
Hello! Newb question here but what do you guys do with the output water from cooling your condenser. It's pretty hot so i've been using it to initial rinse out some of my equipment. I don't see why not but I was wondering if there was any reason it wouldn't be safe (using copper tubes instead of the...

Do you guys think any additives would speed up the fermentation process with Angel Yeast or that it's already got all it needs?

Has anyone tried any of the other lines of angel yeast other than the yellow label?
It’s hard to tell the difference sometimes but I would what differences they make in taste with the final distillates

Re: Does clear alcohol "smooth out" over time?
Of course, volatile compounds evaporate naturally when aged, even in glass. If the jar is opened a couple of times, it will allow these volatile vapors to escape from your spirits and what is left in the jar will indeed “mellow” with time. Conversely, if you aged your products in a cask (barrel or ...

Re: Does clear alcohol "smooth out" over time?
I rarely judge a commercial bottle by the first glass of it. After a couple weeks of being opened, the spirit has mellowed noticeably. I usually have one glass, and put the cork back in and put it back on the shelf. So yes, spirits do seem to mellow out some over time, but I suspect its just from t...

Does clear alcohol "smooth out" over time?
Hello! I recently made some rice alcohol with two different yeast. Initially after a few days of marrying, the second batch was by far my favorite. Now after a few months it seems the first batch is much "smoother" than the other. I know alcohol ages in barrels etc , it helps mellow things...

Re: Simple Asian rice alcohol
The ratios your are mentioning are raw rice to water right? I’m going to try your method next as I really want to taste this sweet liquor!!! Last time I tried with angel alone i didn’t get the same flavors. Have you tried with rice other than sweet rice? Do you have a brand you like?

Re: Simple Asian rice alcohol
Hey guys, Just wondering if you've tried the rice cooking method vs the rice steaming method. I can see how it would make a big difference in timing etc for something brewed but wonder how much difference it makes in something that you are distilling (and the face you pretty much let the wash finish...

Re: First attempt at distilling - Am I missing any info?
…… One big thing I regretted was getting the still spirits water pump. While it works , it’s very difficult to equalize the water coming in with the water it’s pushing to the still. I was almost standing for 5-6 hours fiddling with it the whole time. If you overfill the container it leaks and it ca...

Re: First attempt at distilling - Am I missing any info?
Finally got to spirit run after a lot of over analysis, waiting for some electronics to come in, and a busy holiday! So from the pot still runs (2) I ended up with about 9-10 total liters of 40%. Here is the summary of my spirit run Total 5~+ hours Stick to 55~C most of the run until around the end ...

Re: First attempt at distilling - Am I missing any info?
I realize I'm late to the party, and I hope it's going well. One of the first things I learned with a pot still is 3 stripping runs = 1 spirit run. More importantly, it takes almost no additional effort & minimal cost to make enough mash/wash for 3 runs as it does for one. First time out, make ...

Took your guys advice on waiting it out and i'm glad I did. It cleared up a lot. Finally did my first stripping run! Again I have the T500 will Alembic Dome. I ran it without cooling until the vapor hit around 80+ and turned the cooling water on a little as i got nervous. 1 - This whole stripping ru...

Re: First attempt at distilling - Am I missing any info?
I am going to assume you are talking about using the Pot still head . Yes , you always need cooling water flowing through the condenser .Hot and fast is often mentioned as hard and fast . It just means run the element up as high as you can to get the job done quickly , but only up as high as the co...

Re: First attempt at distilling - Am I missing any info?
Some more learnings. Just did a trial run with some cheap Carlos Rossi wine As long as your vessel to ferment didn't get tainted, even after ferment is done you can leave it in there for weeks without worry. (From another post in this forum). I got worried since it's now almost 3 weeks since ferment...

Re: First attempt at distilling - Am I missing any info?
Another +1 on the power controller. Run your still by the output. Temp & ABV's are only a rough guide of what's going on, but I will say that as you get experience on your rig, you'll be able to predict what's going on cuts-wise & time left in run by the data. You can use ceramic boil enhan...

Re: First attempt at distilling - Am I missing any info?
Forget SG readings with Angel, it incrementally converts starch to sugar to booze, the yeast dosent wait for the enzymes to finish. Have you worked out your sparging method? It will scorch if you throw it all in the boiler You need to dilute back to 40% or less for any run in the still for safety r...

Re: First attempt at distilling - Am I missing any info?
As Cartman once said, there are no such things as stupid questions....... Stupid questions : 1. I read the spirit run can roughly take 5 hours - How do I really tell it's about done? The ABV of the liquid ? The temperature? or the flow rate once it gets to a certain temp? Your T500 will literally s...

Re: First attempt at distilling - Am I missing any info?
Hi, At the bottom of every page is the "Required Reading" box with four links... Reading through all that will invariably lead to additional reading... 1. Depends on how much power you run at but 3-6 hours maybe?. More power = more vapor. In general strip till total ABV of low wines is ab...

First attempt at distilling - Am I missing any info?

Unfortunately for this first run the tool for the trade I got was a t500 and a copper condenser for it. What i'm distilling : Rice with Angel Yeast - Based on most things i've read this is about as...

New to distilling - Hobby for parent life
Hello all! Been looking for a new hobby as my wife and I recently had kids and they are finally at an age where I can breath a little again. Also a buddy of mine looking at it as a way to reconnect / bond with his pops. Spent about a week watching YT videos and unfortunately that brought me to buyin...
