Re: Highwayman Rye Whiskey
I aged some of this recipe in a 5 litter barrel for 6 weeks. I recently sent a sample to a friend who drinks high end bourbon and rye without telling him what it was, just that it was a rye I wanted him to try. He liked it pretty well. I have a badmo barrel filled and sitting that I will crack in 3 ...

Re: Highwayman Rye Whiskey
Sounds delicious, I put up a Badmo Barrel of 74% corn/21% rye malt/55Marris Otter in February that I fermented with a Belgian yeast. I haven't sipped what's in the BM, but the 1.5 quarts I have in glass on oak fingers is pretty spicey and fruity. The Badmo will sit in the rafters for a couple years...

Re: What is everyone drinking?
I have taken my 38 open bottles of whiskey and have been doing a march madness blind head to head. had the wife give each a number and she is doing the pours so I don't know what I am comparing. I am almost down to the sweet sixteen. Been doing around 3 head to heads (6 whiskeys) each night intro3.j...

Re: Highwayman Rye Whiskey
pretty good. it is earthy on the front, I assume from the malt, and was spicy on the finish making my tongue tingle. Have some in a small oak barrel now, we'll see how it is after being oaked.Corn Cracker wrote: ↑Mon Jun 06, 2022 3:54 am How'd it taste? Highwayman Rye Whiskey
Made my 1st batch of all grain. It came out pretty good. Nice rye spice with a little earthy taste. I have 1/2 of it in a small barrel now, we will see how it ages over a few months. Just mashed in another batch today that I will be putting in a bad motivator barrel for long term aging. recipe 40% f...

. You have cold product coming out with the “vapor”. It sounds more and more like a scorch. Have you looked inside of your boiler? You will likely find a burnt on crust inside that will need to be scrubbed out. aaaaaaaaaaaaand this happened to me today. Must have been something wrong with my wash. ...

I think some of the people have a history of getting in trouble with the law for making illegal liquor, but for the most part it is just entertainment.

Re: UJSSM 1st gen to second gen question.
I'm pretty drunk, but If I am reading right
after the first run I used the backset to do second gen (saving first gen stripping run for the strip[ping run) to do the ferment of the 2nd gen
and backset from second gen to do ferment of 3rd gen

Re: Stupid newbie looking for a spoon
With cracked corn the TSC producers pride works great, I made a couple of gallons of corn liquor with it. However if you are looking at sweet feed be careful, don't grab anything with pellets. The cracked corn is just that, the sweet feed has pellets.

yeah sounds like he is saying don't charge the still with ABV above 40%. I think it is agreed it can be dangerous to do so, not sure about the claim on flavor.

Re: First AG come on Rye Whiskey
What was the recepie if you don't mind sharing? Were you using rye malt or plain rye? Fermenting on grain? I was doing some AG mashes but from wheat. I have a fear that rye might be a bit more stickey and can burn on my 4kW electric heater. Any exp sharing will be highly appriciated. I don't have a...

40% flaked rye
30% malted rye
15% flaked corn
10% malted 6 row barley
5% flaked oats
the bucket that fermented out smelled and tasted great on the stripping run. Mixed up another bucket yesterday.

Re: First AG come on Rye Whiskey
If you have that problem again just install a blow off tube in place of the airlock. Hopefully this will come around for you! I still think acetobacter is unlikely, when you pushed the cap down it was very likely at high krausen, and should have been pushing plenty of CO2 out. The pH crash is inter...

Re: First AG come on Rye Whiskey
well with both buckets I opened them up and pushed down the cap. I didn't leave enough head room and the cap was pressing against the lid. I tested the gravity of the real sour one and it was 1.03 with a PH of 4, I added some yeast nutrient and oyster shell and put it under the heat lamp to see if i...
