I don't believe you are using the correct enzyme if its the LD Carlson powder enzyme.
I may be wrong but i don't think it works at those temps. You need to get hi temp amylase like Sebstar HTL or something.
Then you still have your low temp enzyme you put in at 150 or below.

I can't say anything about with barley but I haven't noticed anything horrific with the YL with corn steam stripped on grain.

You don't run by temperature. You run by your take off speed. If you're strip running push it as fast as your condenser can handle it. Are you trying to keep any flavor from the fruit? If you are I wouldn't go with any reflux and just go pot still mode. Any reflux strips the flavors from it. Depending on what yeast you are using, it will slow it down. I know I use DADY yeast and it slows down in that temp range.
There are other beer yeasts that don't mind tho. It really depends on your choice of yeast.

It seems like something must be off with this batch since the first one didn't have any problems. I also don't think pH 4 is that bad. I also wouldn't use baking soda. Pickling lime is what i use to balance out my pH. I agree SG really doesn't give you a whole lot as far as SG and FG readings but it...

If it was me I would put apple juice concentrate in your thumper. I'm sure I am using a completely different set up than you are mine being a 15 gallon keg boiler and using my 13 gallon milk can as a thumper. So in my case I would use probably 2 gallons of juice to cover the down pipe. Amazon still ...
