If i cant get this going again, what are my options? Run it when you get back home next week. It might surprise you and ferment some more while you're gone. Baking soda is better than nothing. I'd pitch some more yeast also. Ya definitely need to rehydrate the yeast before pitching. PH stalls can be a bitch to restart sometimes, so are best avoided. Words of wisdom right there. :lol: Lesson definitely learnt. I dont know why i dropped the ph so low to start. I have gypsum or chalk amy recommendations for which and how much Chalk might help, it's hard to say how much, add a little at a time and find out. I'd go to a grocery store and buy some pickling lime. If you haven't already added any Epsom salt, get some of that too. I have epsom salt so i will ad...

Ok ph of water started at 7.5 i took it down to 4.5 with citric acid temp has been at 85f. Doing that is a pretty good way of getting yourself a pH stall. What is the pH now? Slaked lime is probably your best option for raising the pH, but I'm not going to give you any guarantee that it will restar...

The wash probably isn't stalled, the yeast is just pissed off about the pH. It's too late for egg shells, oyster shells. Calcium carbonate is good for moderating the pH but not strong enough of an alkali to significantly raise the pH. How big is the wash? What kinda water do you have? Here's a hint...

UPDATE After much advise from the forum pros, my first run is in the bag. I stripped both batches down to zero. Total low wines 15L at 35% ABV. NOTE threw away first 100ml in both runs. I think im going to strip both washes and blend together and do a spirit run. I hvae nothing to lose i suppose.
I think i will strip down till 10% abv. Does this sound right.
Spirit run will be slow with starting anv below 40% ABV and running in to tails at 20% ABV

If you are after a neutral and you've got a pot still, then look elsewhere for another recipe IMO. Hey informed ones. NOOB question
When mascertaing fruits in a nuetral for liquers am i better off mascerating at a higher ABV say 60% then diluting down to my final ABV what ever that will be say 20%.

Has anyone run TFFV through a pot still only? What where the results? How mamy runs were required.
