I've tried all three , RO water , spring water and tap water for both proofing for distillation and final proofing for drinking and can't say I could tell a difference apart from less scale in the boiler afterwards.
If you can get it I would go fo RO water.

Well I'm far from an expert but I'll give my opinion I'm not sure what that connection to the keg is but if it's not tri-clamp that might make upgrades tricky later Hard to tell if the head can be separated from the column which is a must for me as getting any packing out will be a nightmare if not....

Well worth building your own in my opinion . Even if you only build the boiler everything else can be then be "bolt on" or built yourself .

I blame UK bread yeasts, there is something different about the standard supermarket yeasts here I think. Always used whatever was in the fridge for breadmaking, usually a tin of Allinsons, and had similar experience to you, most ferments took 10 to 14 days regardless of temps, pitch rate, PH etc. ...

I have a cutter with a blade I deliberately blunted and rounded off so that instead of cutting it creates a internal ridge .... great for making press fit thermonitor ports.
2 or 3 of those ridges should take up that slack to hold it in place and solder should be able to bridge that.
