Re: Pre-prohibition yeast

You might look at some of the old Belgian Style yeasts as well. Those have been maintained by many Abbey breweries for hundreds of years. There’s a yeastbank in Europe that stores a bunch of them. Sometimes the breweries have a culture resent to them so they can rebuild the culture and keep it pure....

Re: Good Results with Safbrew T-58

I just pitched the T58 on a banana wine. I’ve got some fresh going with kv1116, this one I roasted the bananas to caramelize them and activate the enzymes at like 160. Added lemon zest and a couple of vanilla bean pieces split, and brown sugar in 5 gallons. OG is 1060. Just pitched tonight, will see...

Re: An easy low temperature corn mash with angel yeast yellow label

Love the YLAY on occasion. You still need to break the corn to access the starches as stated above. It doesn't have the ability to go through the coating. I too, have not tried it in conjunction with fruits, but it should work on them as any yeast would work on fruits. I wouldn't bother with a sugar...

Enzyme malt

I was just browsing through the Morebeer site and in the base malt section I saw this ‘Enzyme Malt.’ Has anyone tried this stuff? I was blown away by the DP. Malt Specification: Moisture % - max. 7.0 Extract fine % dm - min. 76.0 Diastatic power WK dm - min. 620 Alfa-amylase DU dm - min. 70 This may...

Re: 100% unmalted grain problem

These work great. It’s not that they aren’t the ‘good’ ones, they just aren’t all of them. I use the Alpha in this exact form regularly, when using malt and when not. Insurance with, only enzymes without. I always start with the alpha, even adding at the higher mash in temps of corn for workability,...

Der Wo, First, thank you for all your experimentation and research. Secondly, and most importantly, thank you for sharing. My experience has been with grain primarily. Whiskey, and a couple of rice experiments. On the rice, I did two types for reference here. The first was rice and coffee, the secon...

Re: What do you do with?

This is a question I have seen come up much more recently in posts as well. Many of us are in positions where we have a place to discard spent grains, some are not. In many areas these days, there are community gardens and community compost locations, you don't usually even have to interact with a p...

Can someone post a pic of their corona set up with the bolt configuration they are using to allow the use of a drill? I set mine up with my drill, as was indicated in picture reference it came with, and the bolt just tightened into the mill body further, and blew out a chunk. I was pissed to put it ...

Our fancy Pampered Chef air fryer my wife desperately wanted, that I thought would be a waste of space, has been amazing at roasting. Ours has a rotisserie, and has a cylindrical basket that it will rotate. I had a bit of whole corn left I was able to use it on to get between an 8-10 L, and the rest...

Make sure you watch the heads for your banana flavors and aroma. The peat will come over later, into the tails. Collect every drop you can for your stripping run. There may be flavor combos that occur during fermentation that surprise you too. Make your cuts very carefully on your spirit run, and yo...

I am curious about the liquid corn starch in general. Can you detail what you are referring to? If you decide to use corn starch as an additional starch for conversion, please share how you manage it. Corn starch alone settles out so badly from water, it sinks and becomes like cement at the bottom o...

Ironroot Distillery in Texas is doing a lot of work on heirloom corn varieties. The Whiskey Tribe has done some interviews and visits with them, as has Jesse on StillIt. I do a grilled/ smoked peach dessert too. I've toyed with the idea of smoking some peaches and apples for a smoky brandy as well. It just has a certain appeal that I cannot describe, in the way a peaty Scotch makes you crave fall weather and a bonfire. I was known for my smoked meats when I still ra...

I love mango, and enjoy the occasional mango wine. I was thinking of making my own, and possibly distilling some, for either brandy, or a fortified wine.
