Dump the backset (or save it for use in a sour mash type wash), dilute the spirit from your first run (called low wines) to 40% ABV or less with water and rerun.

You might have some luck searching the Google machine for persimmon wine. Once you make the wine then all you have to do is distill it.

I think Odin tried a nut based mash/wash a year or two ago. I don't recall the outcome.

For easy and corn flavor you can't beat Uncle Jessie's Simple Sour Mash (UJSSM). It's in the "Tried and True" section of the Forum.

Don't have any fireworks, but I have a nice Colt .38 "six gun." And I have a bunch of bunnies trying to eat the entire garden. So I plan to spend time on the deck, tending the smoker and annoying the bunnies with the six gun. They deserve it.

It can be overwhelming. Take your time and don't jump too soon, and be especially careful of most of the stuff you see on you tube. A lot of it is just crap info and some is downright dangerous. Up until now I have always used a neutral spirit as a base for kalhua but I have since learned that "authentic" kalhua uses rum as the base spirit. So my next batch (I make this up for Christmas gifts) will be rum based.

You shouldn't be trying to solder the output pipe to the round surface. Drill a hole in the column so the pipe is a tight fit in the hole then prep and solder as above.vmarkus wrote:... am having a lot of trouble soldering the output line to the round surface.

Doing a spirit run of All Bran today. I think I'll rerun this one with my gin head on the pot still unless the Wife lays claim to the vodka first. In the background are two fermenters with more All Bran working and two more with a UJSSM working. Thanks to everyone.

Good job. I am making a rye variation on the USSSM recipe using 50/50 cracked corn and malted rye. I nuke "aged" it and then moved it to a well used 10 liter oak barrel at 64%. I have to do one more spirit run in order to get enough to fill the barrel. I kept one bottle after the nuke agin...
