ATM I'm drinking 2 year old sweetfeed and coke. Never thought much of oaked sweetfeed until it aged. Can't wait to see how good it is next year.
If you like whisky and coke or rum and coke, sweetfeed and coke might just be the best of both worlds!

Sugar is bought 10-20 lb bags at a time and all family members get a bag or 2 when grocery shopping. I can't keep up with the sugar and Never a question asked. Yeast?? I have bought 2 small jars in the past 3 years and still have 3/4 of a jar left. The stuff just keeps making itself!!! Why buy it?? ...

I've had a few UJ ferments that stalled and the only thing that would jump start them was more crushed corn. I am pretty sure that was due to not enough available nutrients in the wash. Usually after 5-6 generations without adding fresh corn.

i had bitterness from flux contamination. it got through even after extensive cleaning and 3 runs (that ened up being sac runs) i used pickling vinegar (7%) filled it overnight then flushed it out did vinegar run and sac run again...and it was finally ready to go. weevils could give a bad taste too...

If you are doing wineos or Birdwatchers for a clean neutral I'd let it clear as much as possible. I run UJSSM dirty but that is done for flavor. Good corn flavor comes over from the dirty wash, don't really know if tomato brandy is too my liking but a clean neutral has its place in my cabinet.

I just work it off, usually by 9 or 10 AM I am fine, I make home made wine and beer, the wine will definately sneak up on me and give a headache in the morning. I'd just add your strips to your last ferment and do a spirit run on that wash... when it is finished.
I've done UJSSM that way and seems to give the most flavor out for the spirit run.

If you have no black or colored molds growing on it, and it hasn't turned to vinigar yet, it should be fine, especially if it was airlocked.
If you got the white powdery spider web like growth on it you are also good to go. Run it.

You can split the wash and add more water and yes you can add now. Read Birdwatchers or wineos POSW in the tried and true section, both will give you ideas on what to use and how much.

Too much sugar will stress the yeast, way too much will kill the yeast, and stressed yeast doesn't make a tasty drink.

If you read UJ's post on the UJSSM thread, he uses a detuned reflux still, not a pot still. 12 gallons of low wines at 40% would usually yield 4+ gallons of GOOD drinking spirits after cuts at 80 to 70% abv. You can't run your still the same way as Uncle Jesse did, it is not the same still.

I admit that I am a heavy drinker after work, but if I wasn't, insomnia would kill me. I can't sleep. If I drink a few stiff ones before I go to bed, I can get a few hours in. I refuse to take pills. Alcohol is my sleep medication.

I've had stuff that tasted sour almost like vinegar when finished but it ran fine. Maybe the extra rye is giving you the sourness. I think the more acidic the wash finishes the more sour it will be. Might be good info to check your PH.
