Sounds similar to the one i've been doing that Possum posted.. Only difference really, besides the ratio, being that the sugar is inverted before the yeast is pitched. Started makin kit beers over twenty years ago, been makin em ever since. G'day, just a question for the aussies here regarding the best places to source barrels. Looking at getting 50 or 60 litre size for maturing UJSM (thanks Unc) for the missus. I reckon if i can get 6 or 8 generations out of a barrel that size with progressively longer maturation times before retiring...
