The ferment is going good, should be ready to strip on Sunday. I've never noticed so many changes in smells in one ferment before, I usually use dady or bakers and this funky stuff is not the norm. it does smell good though, If nothing else it will be a learning experience and I'll do better next ti...

this ferment is going nuts! it smells pretty funky too, I can't top cooter beer, but this is pretty interesting stuff. looks like it's gonna go pretty dry, I took this pic last night, the s.g. was 1.050

if you do a little research you won't be guessing. all grain needs to be cracked or milled to get anything out of it. and you need more malt to convert your corn. listen to the advice given to you by rad and Corene and MCH, there are plenty of good recipes here and once you get some experience with ...

I made a low gravity yeast mash on Sunday with a little 2 row and malted oats. I mashed it, then brought it to a boil and placed it in my shed to cool and see what I can catch. So I go out Monday after work and there is a small krausen on top, but it doesn't smell like the usual ferment. By Wednesda...

I made an oat heavy whiskey, I'm gonna strip it this weekend. I use malted and crimped oats, malted barley and cracked corn, the ferment smells awesome.

it won't be long neighbor! Okie here, I couldn't believe it when I found one this early, but we had a couple weeks of nice weather. However it was 24°f on Monday so I'm waiting for it to warm back up now.

handmade roller mill powered by hand or my gear reduction motor depending on how much grain I'm doing , works fine for barley, oats, wheat and the like. my rollers don't open far enough for corn, I grind my corn malt in a blender for now.

the crimped oats I use are crimped pretty flat and I use them as is, I step mash them with the rest of my grain in my kettle. they seem to break up pretty fine during the mash and with all the malted barley that I use conversion is no problem, and I'm running my paddle the whole time as well. I do want to build a plated setup someday , but for now I use my pot to strip and then hook up the coolant lines and column extension on my cm and run my whiskey at about 80-85%. I like the outcome and get a full flavored spirit imho. different strokes for different folks. great thread Corene!
