Even though we've migrated a bit from the OP topic... I collect heads and tails in small jars, while obvious hearts (by taste/ smell) go into gallon jugs. I leave the jars to air, checking daily. If they pass my taste test, they get added to the heart cut. If not, I leave them another day. Or 3. Or ...

I was calculating my yield efficiency (using PPG for expected SG). After patting myself on the back shamelessly for getting an efficiency of 86%, I realized that I was using gallons of added water instead of gallons of wort. As I'm fermenting on the grain I really don't know the exact amount of wort...

To evaluate your fermentation, you take a starting specific gravity (SG) and after fermentation a final gravity (FG). Smart folks can use maths to determine the potential alcohol by volume (ABV), but schlubs like me use a brewing calculator. The FG gives a picture of the "completeness" of fermentati...

I think temps are useful for your (identical) wash, or your low wines, on your still. Taste should confirm any cuts, of course. I keep records and they show that temp (and therefore ABV) is a repeatable measure for repeatable conditions...

The old brass with lead in it had around 5% lead IIRC .

If you are still worried , you can “Tin” the exposed Brass with solder .I have done that on a few brass pieces on some or my stills , the solder is still there even though it was just a thin smear .
