Haven't posted much here of late. Latest job is a 500 litre/132 gal copper top boiler Gin still. PLC controller with options for full atomation. At this point they are just using the PLC for their basic recipes. Its very flexible and can handle custom requests. Just depends on how far you want to go...

Why do you want copper? I much prefer stainless as its easier to keep clean. Still dragon makes some nice ones. I have also used them as counter flow coolers as well as condensers. i got a stainless one...it's not all that great for thermal transfer. I built a copper to augment it and works way bet...

sorry to say, I dont think the air still will fill your needs. There are some compact, cheap, safe column still designs here that will give you what you want, and the best bit is you wont need to buy in vodka, you can make a simple sugar wash for a few bux. Just depends on how much you want to fill ...

3 perforated plates will work just fine. Drop to 2 and you might get some instability issues. This doesn't happen with bubble plates, they are so linear it will work fine with 2.
