Re: How cold to run output condenser?

Just cool enough. I don’t think that spirit run output being a touch warm hurts anything. After all, we let jars sit for a day or two to let the most volatiles air out…so what harm could a slightly warm output cause?

Still stirrin has given a perfect synopsis. But words only go so far. To translate the description to your palate, running batches of each grain separately will teach you what you need to know.

Re: Road to alcoholism ?

I am married to an alcoholic that very nearly drank herself to death. Had been to rehab a couple times, and I was completely at the end of my rope. Took a 6 month stint in an exceptionally good inpatient rehab facility for her to finally get over the hump. For years I wouldn’t have ANY alcohol in th...

I use honeycrisp apples panty dropper style…using brown sugar to pull out the juice. Proof down with apple juice or cider, adding sugar as needed. Finish with a vanilla bean and cinnamon stick.

75F kinda cool but should be ok with that yeast. Did you add any enzymes? I think Shady had better FG as some of unfermentables converted. I’d expect lower than 1.027…

Re: First run of new still feed back please

If you’re talking about making cuts on a spirit run, you dilute a small sample to taste (73% will fry your taste buds…I use about 35%). For aging I’d shoot for 60-65%, and dilute after aging for drinking at whatever your preference is.

Re: Sweet corn panty dropper?

My sweet corn is about ready to pick, so hope I’ll start within a week. I have learned that starches will precipitate in 70% ABV, so I’ll probably start with 75% to (hopefully) mitigate the starch issues…

I strain corn after fermentation. The sticky factor plays heavily into that choice. For grains easy to lauter I’ll ferment off the grain.

Jonny is correct. Way back I used only an 8 gallon still. A 44 gal brute was about a perfect size for fermenting.
