Uht won't keep in the fridge any longer than any other cream once opened.
Uht should be refridgerated till cold before opening and using.

Keeping the heads separate from the tails and adding 3 tsp. of baking soda per gallon of heads will make them condense more on the first part of the next run, thus eliminating (well maybe not eliminating but diminishing) continuously building up more and more heads in the subsequent runs. A pair of Vice-Grips set at the depth you want would be very quick and easy.
There is a condensor posted here somewhere with the same construction, apparently you can buy the copper already like that.
You'd have to make sure it'd slip back in the shell after you'd widened it....

I get my raw sugar in 25 kg bags for $20au. Works out at .80 cents a kilo or $1.60au for 2kg.
Not quite as cheap as that, but close enough and mine is delivered to my house by someone with tight lips

I hope you guys aren't wasting those tails. You can use them and collect some extra abv from them if you reuse them. 3 or 4 half gallons of 30% tails is still a fair bit of etoh when combined into a tails or feints run. thats pretty impressive! are there any down sides to this? i mean 36 or so hours as apposed to a 7/8 day ferment? Downside is that it does not like to recycle on the yeast bed. Just to throw another cat on the fire, my alpha is optimised for 100 C temps. ie, boiling temp.
I'm with DD, the spec sheets for my (liquid) enzymes say that the alpha likes a ph round six and the gluco likes a ph under 5. This is easy to do by lowering ph just before the addition of gluco.

Whats the amount of spirits one should expect to produce from the UJSM recipe if followed exactly? ie a 20 liter wash produces how many liters of distillate? Either way will work, but you need to pay more attention to taste than figures. The second method is similar to what i do, i collect 30 litres or so of strip and put 3 or 4 litres of finnished wash in with it. I don't check my % of the charge when doing a spirit run, but have measured it around 48-5...

I believe a medium to heavy toast would suit you better than a light char.
I use medium toast sticks to age rum, but you wouldn't call it light rum.

Aside from a basic 4shots cut, i tip all that is not included in my cuts for the barrell, back into my low wines keg. Heads, tails, cuts left out and a bit of wash goes back in the keg, then it is topped up with strip till the next spirit run. This produces a very good product, my heads cut does not...

If you save your heads and run down into low teen tails and save those, then add them to your next batch in the still...
You will have a more rounded, complex whiskey...whether single or double run.
