My bad, I didn't see that you used liquid malt....liquid malt (as far as I know) will never convert anything because it is the barley starch converted to sugar.

You're boiling your malt and killing off all the enzymes that convert starch to sugar. You shouldn't let the malt ever go above 150 F.

Nope, never gave it a second thought and never had a problem. If you are worried about it bring it to a boil and it will drive it all away.

If you are going to make 2 runs like you have stated then I would collect well into 40 proof on the low wine runs just because there is alcohol in the mix at that proof. Then, on the secong run, I would collect down to 90 proof if you wanted a very clean type of whiskey, maybe even down to 80 proof ...

It's not quite that simple. Surface area for the vapor to escape the surface of the mash comes into play, the amount of heat dissipation from your system to the environment, etc.

Think about this....

If you are not adding more heat then you are adding the same amount of heat as you added for a single column. If you do not add more heat to the system how are you going to drive off more vapor in a shorter amount of time?

I have that matching set. The decanter is great, the glasses have a nice thick bottom. I would prefer the glasses to have a slightly thicker wall but they are still very nice.

AH....so it's a cooling jacket designed to induce an estimated reflux at the top of the column yet tied to the water flow through the Liebig condensor unless you add an additional valve to the water flow system. That clears it up for me. I stand corrected.

I guess you can take progressively greater steps toward a nuetral spirit run and determine when it has cleared up enough for you, but I've never been able to rid the scorched taste to my satisfaction unless I completly refluxed the run.

That still is going to be strictly for sugar washes or a grain wash that has been filtered very well. I think it would be near impossible to clean or be somewhat confident that you cleaned a rum wash after running. The column looks too short for single run, high proof nuetral spirits.
