First real run in the new 26 gallon boiler. I put 25 in and there's plenty of room left. This is the first run of rum for a home Cousin's process experiment to try and make DOK at home

6 month taste test! The oats are obvious in the smell and taste. Sweet, vanilla, more brown sugar than caramel. A bit lacking in body. Will pull another ounce at the 9 month mark.

I think I'm going to get it out of the barrel and re-distill it with some fresh wash. I have about 4.5 gallons, better to use it in something that I might actually enjoy. What will the new wash be? Probably some oats. And I'll be keeping it white.

So I made a bourbon 6 months ago that was 70% corn and 30% Vienna malt trying to get an extra caramelly bourbon. I also put it into an ex maple syrup barrel. 2 rum ferments have been finished for about a week, today I added 2.5-3 gallons of old dunder to each and will let sit another week before stripping. The ferments were very fruity smelling, the dunder was heavy and smelled like a rotten rum cake.

I use two 50 gallon Rubbermaid totes I bought for $8 each. I never put more than 35 gallons in them, work great. Not air tight, but enough to keep bugs out.

I pulled a half gallon of bourbon to finish on some Shiraz soaked staves, also some rums. The bourbon has been in a 5g Balcones barrel since 18 Oct last year and is nearly red!

Started 2 rum ferments with dark brown sugar and half the water. In a few days I'll add the molasses and top off with water. I grew up the Hornindal yeast this time, but still want to be careful with it. I have had kviek fail in molasses on a few occasions.

I'd guess it'll be detectable. My friend had a case of wine at his wedding that was near a fire and it was very obvious in the wine. Very, very good too.

You can buy used barrels as small as 5 gallons if you're interested in that. I have several used barrels and they still impart a lot of character.
