Re: Odin's Easy Gin
If your making gin for Dry Martinis, I found that Odin's is OK but if you drastically reduce the citrous (like by the power of X10) it's quite good in a dry martini...so cut back on the amount and the maceration time of the orange and lime peel for martinis but use as is for G & T's

It's the hops, which are an oil compound. Do a soupy water wash or run your new copper again using just water or rinse everything with acetone.
Whatever is the easiest or cheapest or least time consuming...it'll wash out fine !

Re: Chlorine & Chloramine Treatment
You can ask from your local municipality what the chemical is that they chlorinate with, but most in the US (most of the world) have moved away from the liquid hypochlorite and are using the solid Chlorine Dioxide (Sodium Chlorite) The reason is, with hypochlorite the chlorine stays in the water sup...

Re: Using wood chips for aging.
It's not the barrel stave chips that have the problem with Pesticides, it's the fruit tree woods chips...apple, peach, cherry and the like. These trees are sprayed the keep the bugs from damaging the fruit and unfortunately the trees are sprayed year after year and the Pesticides are absorbed into t...

Re: Why store in a dark cool location?
+1 Twisted Brick...chemically/physically what I believe happens is the "O-H" bond on the flavor alkaloids (which are light organic oils) can be attacked by strong light and or heat. When these are dissolved/attached to an alcohol this happens at a much slower rate, so it's during the macer...

Re: Used Barrels?
If you can find used Bourbon barrels they are supposed to have been used only once. By law they MUST be used only once...(actually the law states that in order to be called whiskey or bourbon the "white dog" must be put into new white oak casks)...that's not to say that the whiskey hasn't...

Re: Diluting low wines with backset?
I was trying to figure how Goshen was using the "sour beer", that the Tax agents found when they raided his croft. It had to be either 5% of the fermented wash that was ready to run or it was pot-ale that had been allowed to go "lactic" before being added to the wash or mash, or ...

The answer (my two C's) to lowering the citric on something like an Odin's easy is to reduce the maceration time to just a couple of hours and defiantly not two weeks.

Re: Dilution effect in the boiler
To my understanding, the low wines are diluted to stop the liquid in the spirit run from, possibly, becoming "super-heated" and then flash boiling in the still. This is a very unsafe situation and boiling liquid could escape from the still. Glass chips are added for the same season.

Re: Diluting low wines with backset?
They all gave you sound advice you seem to be well on your way + 1 Durhommer...don't sweat it, the back-set (bourbon) and pot-ale (scotch) are used the acidify the mash for the next batch (not for extra flavor) rancid dunder however, is used to create esters in Naval Rums and IS added to the lows f...
