The jars ya wash out are definitely no good for aging, not even too sure about mason jars Stainless lid preserving jars are ok if the seals are made of cork or Teflon or can be wrapped. As others have said chill it right down and filter it before it can warm, what you get you might want to re-run as that is gonna have some real raggedy arsed tails in it

Any idea what sort of wine Mch? I have great results using my old Italian oak barrels that use to age my home made port in. Other than rinsing and conditioning it with hot water I just started filling it with rum at around 68% and eventually the flavours melded perfectly
