just pitched the yeast....started going in several hours. so try adding more enzymes and nutrients and repitch yeast starter. sounds like it may be a 4 week slow ferment using enzymes at low temps? gman

can you guys comment on figuring amount of heads to exspect from a given run? think smily says about 18% or so and ~ 57% of middle runs. i find the info in some books to be confusing. simple math in our unpredictable hobby would be nice. say a good clean sugar wash and a corn mash. think i'll order ...

i believe you can but it is a state by state issue. where i am is a 3 tier state. i'd have to sell my booze to a state abc and buy it back to sell for tasting if it was allowed. this is why it takes a long time to get licenced......lots of research and lots of paperwork and a bit of $$. gman

[ Thats all about it in one sentence, BUT in every stage you might make a small change and the cheese will be completely different. Its a very nice to make cheese, but similar to distilling alcohol: the better you get at, the more your brother in laws and the "best friends" hang around you...

my 60 gallon steam kettle will hit~270 deg or so at about 35psi. thats as safe a pressure that i like .it's rated at 50psi but i don't take it to the limit. so yes if you pressuize your boiler you'll get much hotter.....and it will stay hot if you insulate. gman

kontes was in new jersey. 60 L is a huge flask....most likely a modified round bottom flask. cheap is good but not many peolple can work a 60 L. my limit is 20 L. hope that helps. if is is a reaction vessel it may need no mods at all. yes it's heat safe with a proper heating mantle. gman
