Re: Scotch - what not to do
Take it or leave it, I use fermcap on barley or wheat AG strip runs (3 to 4 drops/10.5 gal) filling the boiler at 68% capacity. No puke.

What's the whiskey you're going to put in that new barrel? Good show you got enough to fill a 5.

Re: Homebrewing.com cheap barrels
Hey guys. I'm not knocking used barrels. When I bought my new barrels, it didn't seem to be that much of a difference in cost between new and used. If it's cost prohibited to buy new, or it's just not what you want, by all means buy used. If you fear a new one will do your spirits wrong, consider wh...

Re: Homebrewing.com cheap barrels
Personally, i don't know why a stiller would buy a used barrel. You're giving up the first use, which is best for some spirits. If you want a used one for aging an all grain where you might want a lighter wood treatment, why not buy new and make your own used barrel? Check out the many barrel thread...

Re: Using cooler for cooling water reservoir
I run a 15.5 gal boiler with pot still head and recirculating cooling. I use a 5 gal bucket as a reservoir. When it gets too hot, i dump it and refill. I'll go through maybe 8 buckets during a 12 gal strip run, using about 40 gal of water. Temp is constantly cycling from cold to hot for each bucket....

Re: Tasting Spirits - Developing a Palate
I am fortunate and blessed to have a great member within 10 minutes of me. Met him through an S3 meeting list year. See him every weekend or other weekend. One of us is usually mashing one while the other is running theirs. Makes for a nice brew day. He's going with me to a homebrew competition thi...

Re: Tasting Spirits - Developing a Palate
Got that right. But I think we'd rightfully spend most of our time and taste buds sampling and comparing the individual spirits. Homework, right? When blending, I find it takes a lot of patience and careful note taking to blend and taste the results as it needs time for the spirits to react and equi...

Re: First scotch
for the sherry I think all just add a Teaspoon per pint and see how that works I'd cut that back a bit. I did 3/4 tsp per pint (due to miscalculation, misjudgment, er, maybe some drink involved) and thought I ruined my 2.2 gal single malt batch. It was way too much sherry. Now, 3 months later, sher...

Re: gin blends
Pot still.
1) Your base spirit is already clean. No need to further cut heads or tails (other than the first 10 or so ml of intense juniper oils).
2) No need to obtain higher ABV than what you'll get with the pot.

Re: 100% malted wheat
I really recommend roasting about a quarter of the wheat to tan/light amber. Adds loads of lovely bready flavor to the whisky. Good call MDH. I roasted 20% of my malted red wheat batches this past winter and it is mighty tasty. At 5 months, that roast flavor really comes through in a very nice way....

Re: Storing in stainless
I don't shake or invert my cornies so maybe I shouldn't be too worried about inappropriate elastomer contact, but I have taken steps to eliminate as much as I can. Remove the poppet valves from the ball or pin lock posts. Remove the fill tubes. I made some teflon disks and spacers to put in the post...

Euphoria, those corneys are keepers. I use them for storing low wines, holding the keep cuts from larger spirit runs, holding barrel dumps, as well as aging in. I don't use my carboy anymore. Afraid its gonna bust and eff me up.

S-Cack, Have you noticed any evaporation loss with the 0.010" disks? Do you use them alone or backed up with the metal lid? I've been using 0.04" and 0.06" disks alone. They seal nice. Better alone than with metal lid as backup. Can shake it up without leakage. I've wanted to check e...

Re: The Badmotivator Bain-Marie and Oak Barrel
When I was at BT, they told me it was the same as what is put in the barrels and it is not aged before bottling. I did taste mash #1 right at the spirit safe and as I recall it was not noticeably different. This was information from a guide that has been there many years and is on the tasting panel....

Re: The Badmotivator Bain-Marie and Oak Barrel
An interesting learning tool is to acquire a small bottle of unaged white spirit from one of the big guys. Examples I've acquired are the readily available Buffalo Trace rye and wheat mashes. Compare them to the various aged versions of the new make. Sample side by side, new make vs aged. Think abou...

I've had a New Braunfels vertical charcoal fired water smoker for 20+ years. I modified the charcoal pan with adjustable ventilation which makes it easier to get to smoking temps. It's a good, very robust, smoker. However, I have a new toy. I was recently given a Camp Chef Smoke Vault. After three o...
