Could it be because the temperature was different when adding the corn? The UJSSM method doesn't use enzymes, so you don't want any gelatinization happening, which is what happens when you put corn into hot water. Well I got 4 packs of the us-05 and 4 packs of ec-118 for when it warms up a little more, unfortunately I forgot them in my truck glove box while it was +30 for 2 days, do you think the yeast will still be okay? I can only blame myself

I personally use a small heaping table spoon of bakers yeast per 5 gallons of mash. You just need to be patient on these forums not everyone is on every hour.

You have a good mash bill and it'll make a good drop, but you'll need a lot of it to make a gallon of booze. At 2#/Gallon, you should have gotten 1.060 or better. My malt house said I can return them no problem for a couple bags of base malts, they have a very nice smelling oats one and some different wheats and barleys, just shows there is something new to learn every second in this hobby, and malt doesn’t necessarily mean malt.

I always filter my mash before I run it, you can use a paint bag or a cheese cloth, some people here use a mop bucket to squeeze the bag, you can hang it over night, I use a combination of a bag and a double mesh strainer,
