I didn’t taste them, I just made these yesterday and didn’t wanna stick my hands in them yet.

Re: Same batch looks different.

Well I just took a look and the thicker one on the left had a nice big foam cap and bubbling away and the thin one on the right had a few bubbles here and there and almost no foam, I’ve never had this kind of trouble with my ag whiskeys, I also used us-05 yeast when I normally would use fleishmans b...

Re: Same batch looks different.

Hopefully it didn’t gelatinize, the water actually wasn’t at a boil it did have some bubbles coming up, I then pitched the 14 lbs of sugar stirred it then added the corn, waited about an hour then topped it off with the cold water and let it sit for about 4 hours before I pitched my yeast. Will it b...

Re: Same batch looks different.

Could it be because the temperature was different when adding the corn? The UJSSM method doesn't use enzymes, so you don't want any gelatinization happening, which is what happens when you put corn into hot water. If you don't have enzymes to add, you might be in trouble. Okay, it wouldn’t be my fi...

Same batch looks different.

This is my first attempt at a ujssm, I’ve done some apple Brandy and some oat and rye whisky. So what I have done here is I boiled 7.5 gallons of water, added 14lbs of sugar and stirred it then added 14lbs of milled corn. Then I added the rest of the water to help cool it at the end. The only differ...

Here, this is what I use: https://www.ebay.com/itm/Wet-Dry-Electric-Grinder-Mill-Corn-Grain-3000W-110V-Wheat-Feed-Flour-Cereals-USA-/174605040653?_trksid=p2349624.m46890.l49292 More expensive, but it has a motor too. I personally use a small heaping table spoon of bakers yeast per 5 gallons of mash. You just need to be patient on these forums not everyone is on every hour.

Re: Needing a little advice

I've run sugar washes on bakers yeast (SAF-Instant from LeSaffre / Fermentis, makers of US-05) inside the house with temps between 18C and 21C. I got clean BW washes fermented down to 0.990 ish without any grief, but they did take about 10 days I think to get that low. Obviously being inside the ho...

I live in Canada and although I missed my opportunity this week to ferment while the weather was sunny in the mid 20’s I would love to get fired up for the summer. The next couple weeks is supposed to be low to mid teens and around 5-9 at night. Normally I use bakers yeast but I feel these temps mig...

I cook everything in my pot and pour into my fermenter and ferment on the grain. Re: fermenting grain

You have a good mash bill and it'll make a good drop, but you'll need a lot of it to make a gallon of booze. At 2#/Gallon, you should have gotten 1.060 or better. I get 1.074 with 2.25 pounds of grain per gallon using corn meal. Grind that cracked corn into a fine meal. I gel the corn for about 2 h...

I've also just cut out my thumper, for stripping runs. I always had crystal clear product, but it took an extra hour to get to temp/first drops. Much happier without it (I'll put it back in for spirit runs - that will add some time!!). Why does it take you an extra hour to get your thumper going? A...

My malt house said I can return them no problem for a couple bags of base malts, they have a very nice smelling oats one and some different wheats and barleys, just shows there is something new to learn every second in this hobby, and malt doesn’t necessarily mean malt.

These malts are totally new to me and the malt guy didn’t really tell me anything when I bought these, I have only dabbled in malted rye and barley, so these have no sugars to convert? I checked out the chocolate sundae recipe, this is more for flavoring because it has no sugars? Because if that’s t...

Would it be beneficial to do a stripping and a spirit run for a ujssm?
