What do you know about PH?

I make mostly whisky. i started checking the PH of finished spirits. most are around 4. they taste just fine to me.

I just ran an infected mash (acetic acid produced) that spirit is noticeably sour at 3.8

started checking other commercial boozes, 4 - 4.4 (not an exhaustive search)

so i looked into the government regulations which say it has to meet their PH standards, but i can't find what the hell their standard is...assuming 4 must be OK since i found a few commercial whiskies in that range.

wikipedia says ethanol is basically neutral. right around 7....but that ain't not whiskey.

anyone else have any numbers? or know what the government considers "acceptable"

I read that many whiskys are in the 4 pH range.
I never came across anything about law telling which pH it has to be.
Let's see what more educated than me will say ;)
