Thinking about starting a Hard Apple Cider.
Was wondering if anyone else here has done one.
If so, how did it turn out and what recipe did you use?
I have one recipe but I've never tried it. So i dunno how it'll turn out.
(1) Gallon Apple Cider
(1) lb Sugar (2 cups) (can use brown sugar if desired)
(1/4) cup of Honey
(1) handful of Chopped Raisins
(1) tsp Yeast Nutrients
(1) packet of wine or Champagne Yeast
Keep in mind more sugar could be added, but with more alcohol comes less apple cider flavor. I want something that still has the flavor, but is equivalent to a beer, so this recipe is shooting for an 8% + ABV.
Start by heating up the cider. You don't want it to boil, only heat it up enough to dissolve the sugar more easily.
Add the Honey, Sugar and Chopped Raisins. Stir until sugar is dissolved. Once dissolved remove from heat and allow it to cool down.
Once its kool enough for you to touch, or 95 degrees Fahrenheit (or 35 Celsius) pitch the Yeast. Allow yest to set for 15 minutes then stir and aerate.
Now place lid on fermenter bucket and attach airlock. You may also cover with cloth if you prefer that method.
Allow to ferment for 2 weeks. Rack into secondary fermenter, reseal and let set another 2 weeks then rack again.
At this stage you can either re-rack and let it settle and clear up or you can drink it.
This Hard Apple Cider improves with age.
