Bayanus for beer fermentation

I have produced some beers with this yeast strain generally used for wines and fermentation resumes. I liked the result, I used it with a controlled temperature of 18 ° C, in the future I would like to use it with lower temperatures. Anyone have beer fermentation experience with this yeast?

i used bayanus for beer. it has floral notes, not fast fermenting even on beer and low sg. my experience is that it is slower on low temps, slower than say us05 at the same temp but it will ferment dry at lower temps, just takes time. it tolarates higher and abv. it makes very nice bread.

Yes, I also noticed a slightly slower fermentation. I got 75% attenuation. At what temperatures did you use it?

i do not do temp control currently. in winter nights get into -C and summer is high teens to low 20C. in winter i try to warm with a lamp. bayanus is clean fermenting eith floral notes even at higher temps, but for beer i would try below 22C where possible.

Got used to make my graff (barley malt as 25% of all fermentables + 75% clarified apple juice) using Fermentis SafCider at 18-22°C. And even jacked it in a freezer once upon a time. Delish, especially with dry hopping technigue by means of some trivial "crafting thangs" like Cascade or Citra...
