Just tasted some 2 year old that I did as an experiment with going deep into the tails - I know that what it is but damn I like it

Did you keep really deep tails to temper with or keep the whole lot?
I keep everything below 15% to temper with if needed, it's super flavorful and the oils are for the most part gone so it doesn't cloud up on me when proofing to 45%

Good to hear.
Went into tails with Crow's Rum not too long ago. Already tasting the benefit.

Nice. Can you still detect any tails at all, or is it totally transformed? And two years in a barrel..... Was that a new barrel, or previously used?
Must have some great mouth feel to it. Congratulations.

Do you take an extended hearts cut?
Or did you cut out the mid tails but keep late tails? Pugi style? viewtopic.php?f=14&t=5994

Aged it in a 5 time used Gibbs 1 gal barrel, after a heads cut and a couple jars of nasty early tails cut, added late tails to bring it down to 65 for barrel ageing.
I know and can taste the tails but they are pleasant to every one that has tried it, def adds a lot of caramel butter goodness.

Yea made a 5 gal barrel of that, while it tasted good it's hard to call it a rum. This one aged in a used barrel turned out more rum like.Shine0n wrote:I would hope a used one otherwise it'll taste more like a rumsky

So similar to the Pugirum technique I guess. Interesting that you say it adds caramel and butter.Oldvine Zin wrote:Aged it in a 5 time used Gibbs 1 gal barrel, after a heads cut and a couple jars of nasty early tails cut, added late tails to bring it down to 65 for barrel ageing.

I have a bit over 50 litres of Pugirum on oak at 65% ABV. It's only a month old but can't wait to drink it around the usual 6-12 month period.
