First Rum Attempting to BUTTER as well

I started this process in ShineOn's Butter Rum thread but thought as I progressed I would break away from there then post final results back at his topic.

I transferred wash to boiler this morning.
Turned the power on at 7:45. Full power 4500w
the wash started at 70F.
I Recorded the temp 15 minutes later, Then every 5 minutes. So time & temp looks like this

7:45---70F
8:00---108.5F 18amps
8:05---122.5F
8:10---135.2F Turned down the controller
8:20---139F
8:25---144F


I am trying to get the temp to hold just having to play with controller....
more to follow.........

9:00---140Fhave been turning down controller even more.....2amps
9:20---still 140F....have turned controller off completely will continue to monitor temps

I finally have begun the cooling phase.
I pulled the insulation off the boiler and turned a fan on it.
Wrapped a wet towel around as well.
it is down to about 115F.
going to try to get as low as possible by noon. my plan is no hotter than 100F then I will start the run.

I am getting ready to set the still up& apply the heat in about a minute.
It is down to 101F.
right now it still smells like normal molasses wash.
will post more in a little bit.

Good luck Hoosier, forgive me if I've forgotten but how close was the ferment from finishing or was it completely finished.
That was one of the biggies, "racking" early and temps played the biggest rolls in the latest studies I've read.

Lemme know ifn it turns out.

Mine didn't smell like normal wash, it was different just not like rum wash.

I'm going to experiment a little more with temps and length of heat up to see if I can get a protocol that works for all.

For now I don't heat up too fast because when the aquarium heater screwed up I'm sure it didn't just shoot to 135 in 45 minutes so maybe a longer, gradual heat up would be better for repeated results.

I think it finished Either Tuesday night or Wednesday morning. I could not get to it until today.

with this being my first rum I am not sure what is supposed to smell like.
I am trying to keep between 80 & 85%abv but struggling to get below 85-90%abv

I finally got the column figured out a little bit.
starting getting right at 85% then it dropped to 75% and is staying there.
I tossed the first pint as fores.
I have collected 10 pints most of the way through pint # 11.
I have a coffee filter on top of them for airing will "look" at them further either later tonight or tomorrow morning.
I will update as things progress.

I am not smelling anything that smells of butter right now but might not know what I am looking for either.

I ended up getting 15 pints.
The first 4 were in the 85-90% range.
#5 through #11 just about rock steady @75%
#12 &13 were 70%
#14 started @ 70 then steadily dropped to 30%
#15 was from 30% to about 10%.

From Start of the run to finish was 3 hours 50 minutes.

I am not sure I got any butter or not.

Everything is sitting on the bench covered by Coffee filter to air.

I Checked my jars earlier today. I am not smelling anything that smells of butter yet.
It is smelling more like rum now,, less like sweet neutral.
I will let it air some more and see what is what.
There is a definite molasses/rum flavor in jars 5-13. I have a feeling that 5-13 are the hearts, maybe even 14.
All those are the ones that came off at 75%.
I was running them through 2 plates on the flute. It took a little while for me to play with heat & reflux to get where I was getting 75%.
At first I was trying to use plates in the "middle" (#3&4 from top) but all that did was flood top 4 plates. I closed top 2 plates, turned heat off & opened #3&4 and let them drain. Turned the reflux up for a couple of minutes then just had top 2 plates "active".

Wow, do you have any pics of your rig where you can open and close plates at home during your run? Much nicer than most of us run.

Here is one of my first posts.
The last post has a picture that you can see the valves. When open they drain to the plate directly below.

It was built by a guy in Connecticut I believe.
Here is a link to the build process and a link when he decided to let it go.
It was bought by a guy not too far from me. He used it maybe 6 months then put it in the attic of his garage for about 5 years.
When I was looking to get started in this hobby he offered it to me.
Gave me a keg that I needed to have the flanges on too.
