Storing Vanilla Beans

Post by fizzix »

LOTS of great historic vanilla posts, but I've yet to see how to store them for future use.
Refrigerate or freeze an opened pouch?

I vacuum seal and store at "cellar temperature".

I keep mine in a glass laboratory test tube with a cork in it, they seem to last a long time.
Do they actually have a shelf life?

Like most natural products they do have a shelf life. A couple of years if sealed, cool, dry and dark. Realistically, a lot longer but in theory you're losing flavor so they say, but I could never tell the difference.

Bought some in Bali and kept him in a plastic tub in a drawer and went mouldy and musty.. It’s worth checking on them now and then.
A sad day,,,,but I guess I’ll need to go back and buy some more... :D

How about filling a small jar with the beans and topping it off with 95% neutral?

This is what I do and then I use the extract to flavor whatever I'm working on. Seems to be a more controlled way to get what you want when flavoring. YMMV

Thanks, pals. Now to venture into a vanilla rum test before committing to a whole rum batch.
You guys know your stuff.
