My own Stiggins Rum

In a nearby banana rum thread MichiganCornHusker posted a link to Plantation Pineapple Rum.

I really liked what I saw there so I decided to give it a go.

First I wondered what kind of container I'd use to add pineapple to rum, I don't like the idea of trying to clean chunks out of a carboy.
So I found and ordered one of these:

I also have a 5 gallon corny keg with a big opening at the top.

I decided to use the glass carboy for the fruit and the corny keg for infusing the rinds.

I just happened to have several gallons of my own dark aged rum and several gallons of new rum.
So I'm infusing a large amount of fresh ripe pineapple in the dark rum and a bunch of pineapple rinds in the new rum.

In a week I will run the new stuff through the pot still again and then let it age while the fruit infusion goes on for three months.
I think it's going to be a very happy Christmas around here!

I was thinking after it soaks in rum for a few months it may just make a great dessert ingredient.

Wanted to try this but just haven't yet, maybe because the rum doesn't last that long. lol

Give some updates as they happen, very interested in the results.

If the rum doesn't last, one of two things is happening...
You're not making enough, or someone's got a big thirst! :D

I had to up my effort in the rum category, if I can just produce 15 gallons a year then I can stay ahead of the angels (and the others).

I feel ya, it's not that I don't want to make it...I simply don't have the time.

60 hours work week
Out of town alot here lately
4 year old

Hell, I haven't went fishing in 6 months :(
With this storm down here I may have tomorrow off early and could get a few ferments rolling
I have around 8 gal blackstrap, 100 lb grains and malt and some malted corn from a buddy up the county a bit.

I just need to make the time. lol

Me eggs are scrambled lol
Doing 60 gal of rum tomorrow hoping it's done by next Thurs so I can strip it all down.

Just a quick update, things are mostly in line except I just ran the rum that had the pineapple peels in it today.
The distillate definitely had a pineapple essence to it.

I also got about the nastiest tails I've seen in a very long time!

Made my way out to my broken down shed today thanks to my brush hog of a weed whacker and to reward myself took out about six ounces of the pineapple rum that's just been aging white in a glass carboy out there.
It was very hot to the tip of my tongue so I added a good deal of water.
It smoothed out, tastes of pineapple for sure.
Probably needs another year or two or maybe now to be put in a barrel, in glass it doesn't lose any ABV so it could go in a barrel as it is.
I will ponder as I drink this little bit, might just want it as-is.
Bet it would be awesome added to pineapple juice!
