I'm not sure if this has been mentioned here yet? I just found this with maybe my favourite distillery! I've been spending hours trawling this forum and there are is load of often contradictory information on how Jamaicans make a full bodied rum. Which is not to take away from the great work done by forum members on finding info but I think we're stuck with reading 100 year old patents that may be referring to different styles of rum. This video has Hampden Estate employees with the guy from the Cocktail Wonk website. It has a bit of corporate crap but they're quite open about their production processes. I guess the magic is in the terroir!
I've only got my third rum in the fermenter now so I can't add to any further discussion. My muck bucket has quite an exciting looking mold for a start so maybe some day I'll be able to being the funk?
