Amaretto

Started with 95% neutral spirit, made for Wineo’s plain ol’ sugar wash.

1245ml at 75%
200g ground apricot kernels
200g roasted almonds
This filled a 2 qt mason jar

2 qt at 50%
10g / 4 pods of chopped vanilla bean

macerate for 3 weeks

Pressed out the ground almonds, filtered with a coffee filter to remove sediment.
Strained the vanilla out.

Diluted them down to get 1 gallon of liquid in separate jars.
redistilled separately in an Air Still.
I put 25grams of chopped apricot kernels in the botanical basket.
I saved the vanilla beans and added one more to the botanical basket for the vanilla distillate.

Combined the both batches and diluted to 40%.
Yielded 9 quarts

Caramelized sugar:
2000g / 10 cups cane sugar
710g / 3 cups water
84g / 4 tablespoons molasses
5g / 1 teaspoon citric acid

Dissolve the sugar in the water, add citric acid, bring up to a low boil, reduce heat and simmer for 2 hours, stir frequently to prevent scorching.

Cool and mix with 1 gallon of the 40%, slowly stirring till it is fully dissolved.
Yield 1.5 gallons,
I am letting it sit for three weeks before sharing it.

I am making this for a gift for a good friend. I found that i really like the almond/vanilla blend without the added sugar. Will definitely be making more.
Turning my habit into a hobby one drop at a time.
