I wish I had kept some of batch #3 to A/B with but this one is better. I upped the spearmint and although I'm sure it affects the flavor it comes out more noticeable in the smell. This absinthe is very sweet but has great herbal character, I wish I had a better taste vocabulary but this was a great batch.
1900ml of 85% + 1100ml water + tails from last batch

Looks tasty, Ivanchuk. I'm inclined to use more anise and fennel than you.
One of my problems is staying away from the stuff to let it age. I recently found a bottle that got lost in the back of a cabinet. It was 15 months old. The flavor was unbelievable. I looked up my original notes and found that I really didn't like it much when it was new.
Keep posting. We need more absinthe talk. People don't realize how fantastic it is.
