UJSSM backset for first full mash?

Post by quidjibo »

I will be stripping my Gen 6 UJSSM and then doing a spirit run on gens 4,5 & 6.
For my next batch I am keen to do my first full all-grain mash (planning 75% corn, 15% rye, 10% barley).
Should I keep some backset from the Gen 6 stripping run and use it for the all-grain mash or start fresh?
I have been enjoying the UJSSM and have around 10L aging (plus will prob yield another 4L from this spirit run), but I find it doesn't quite have the mouthfeel/viscosity of commercial bourbons so hoping an all-grain will give me that.

Another question: will the mouthfeel of my aging UJSSM on oak improve over time, or is that just a characteristic of a sugarhead wash?

You can, but I dont think it will be needed. The mashing of the corn should lower the PH enough on its own. I didnt use any backset in my first AG bourbon and it worked out just fine.
Now, that bourbon Im working on now, I am using backset.
