Steamed feed corn and angel yeast
Combined 5kg (8.75l) with 5 litres of boiling water and let sit in BOP for 20 minutes
Add to fermentor and bring total volume to 28l
Bring to 32c and pitch 25g of rehydrated angel yeast.
Ferment at 32 and stir twice a day for three days
Initial thoughts are it was pretty quick to gelatnise and smelt exactly like I thought it should At this early stage it is by far the easiest corn that I have worked with, I will update in a few days
I may have been a bit heavy on the grain, my maths brain stopped working for some reason

Re: Steamed feed corn and angel yeast
It will work well, the yeast Angel loves the well gelatinized corn. In any case, corn malt is my first choice (with traditional mash) but that is a good option.
Re: Steamed feed corn and angel yeast
have you been using this yeast without steaming the corn? if so would be interesting to here of percentage change if any

Would love to see the FG. Keep the experiments coming.

Re: Steamed feed corn and angel yeast
No first time with the Angel Yeast and first time with this corn (the product is actually steamed rolled and dried prior to packaging)

It will be interesting to see as I think I may have pushed both the yeast and the corn to the upper limitTwisted Brick wrote: ↑Wed Jul 28, 2021 9:31 am Would love to see the FG. Keep the experiments coming.

Easiest conversion I have ever done, are you at the same ratio for cormeal as you would be for a grain in terms of weight per volume?rubberduck71 wrote: ↑Wed Jul 28, 2021 10:48 am Cornmeal + angel yeast for me!

Re: Steamed feed corn and angel yeast
Why not?
Cornmeal is simply finely ground corn. Typically, it isn’t ground to flour, just a very fine grind. So, pound for pound … it’s corn!
Slam dunk!

Yep - right around 2 lb/gal. No doughballs at all pouring it in warm water using a drill mixer attachment.
Easy-peezy, nice & easy.

Re: Steamed feed corn and angel yeast
I have an experiment running with micronized corn (steamed and rolled, so partially gelatinized).
I have so far run four strips and am waiting to do the spirit run when the gods of spare time allow me. Yield was great, flavour is intense. I'll know more when the spirit run is done.

Are you using the Mitavite and if so what ratios did you use?

This one Martin ?
Lifes about to get busy for me so the results will be sitting as low wines for a while yet.
I've been having a play around too, seems to be working out ok so far.Lifes about to get busy for me so the results will be sitting as low wines for a while yet.
Re: Steamed feed corn and angel yeast
What ratio you doing. I have been doing 15kg per 40l water.Sporacle wrote: ↑Wed Jul 28, 2021 11:26 amIt will be interesting to see as I think I may have pushed both the yeast and the corn to the upper limitTwisted Brick wrote: ↑Wed Jul 28, 2021 9:31 am Would love to see the FG. Re: Steamed feed corn and angel yeast
I'm a touch over 1kg to 4 ltrs, I think for some reason my brain has not worked properly for about 3 days, it was 5kg that's about 8 and 3/4 ltrs of volume and a 30ltr fermentor to about 28ltr full, so maybe I'm not at the upper limit, damn stupid brain

Re: Steamed feed corn and angel yeast

Re: Steamed feed corn and angel yeast
Yes I used Mitavite and I used a ~1:3 ratio (15 kg in 50L). I also added barley and rye (70% corn, 20% barley, 10% rye).
The corn flavour is very strong. The jury is out until I finish the spirit run.

Re: Steamed feed corn and angel yeast
Just finished 0.996 or around that, got about 20L yield, smelt good had a very oily film on top, not sure if it was something in the corn or the angel yeast ( I have some in a UJSSM with bakers yeast and there is a very small amount of oil on top of that)Twisted Brick wrote: ↑Wed Jul 28, 2021 9:31 am Would love to see the FG. Will post the yield from my stripping runs in a few days

Re: Steamed feed corn and angel yeast
Looks very flavorful! Prolly won’t need a dollop of EVOO to prevent the puke?
Cheers!

Re: Steamed feed corn and angel yeast
I have found that washes with Angel yeast rarely puke.

Re: Steamed feed corn and angel yeast
The oil is from the corn. I personally have never had corn puke, but then again I put a few drops of defoamer in all my ferments…

Thanks for the update. Gonna have to run some angel yeast batches.Sporacle wrote: ↑Wed Aug 04, 2021 7:29 pmJust finished 0.996 or around that, got about 20L yield, smelt good had a very oily film on top, not sure if it was something in the corn or the angel yeast ( I have some in a UJSSM with bakers yeast and there is a very small amount of oil on top of that)Twisted Brick wrote: ↑Wed Jul 28, 2021 9:31 am Would love to see the FG. I was at 70/20/10 but wanted to dial back the corn sweetness a touch and increase the rye a touch will wee how this goes..
Re: Steamed feed corn and angel yeast
Stripped today 20L charge and ended up with 3.5L at 30abv, rough maths in my head I figure the mash was at the 7abv mark or there abouts.
