Steamed feed corn and angel yeast

So I've started a new experiment with steamed feed corn
Combined 5kg (8.75l) with 5 litres of boiling water and let sit in BOP for 20 minutes
Add to fermentor and bring total volume to 28l
Bring to 32c and pitch 25g of rehydrated angel yeast.
Ferment at 32 and stir twice a day for three days
Initial thoughts are it was pretty quick to gelatnise and smelt exactly like I thought it should

At this early stage it is by far the easiest corn that I have worked with, I will update in a few days :D
I may have been a bit heavy on the grain, my maths brain stopped working for some reason

It will work well, the yeast Angel loves the well gelatinized corn. In any case, corn malt is my first choice (with traditional mash) but that is a good option.

:thumbup: have you been using this yeast without steaming the corn? if so would be interesting to here of percentage change if any

Cornmeal + angel yeast for me!

Great conversion & no boil or steam needed...

No first time with the Angel Yeast and first time with this corn (the product is actually steamed rolled and dried prior to packaging)

Easiest conversion I have ever done, are you at the same ratio for cormeal as you would be for a grain in terms of weight per volume?

Why not?

Cornmeal is simply finely ground corn. Typically, it isn’t ground to flour, just a very fine grind. So, pound for pound … it’s corn!

Yep - right around 2 lb/gal. No doughballs at all pouring it in warm water using a drill mixer attachment.

I have an experiment running with micronized corn (steamed and rolled, so partially gelatinized).

I have so far run four strips and am waiting to do the spirit run when the gods of spare time allow me. Yield was great, flavour is intense. I'll know more when the spirit run is done.

Are you using the Mitavite and if so what ratios did you use?

I've been having a play around too, seems to be working out ok so far.
Lifes about to get busy for me so the results will be sitting as low wines for a while yet.

What ratio you doing. I have been doing 15kg per 40l water.

I'm a touch over 1kg to 4 ltrs, I think for some reason my brain has not worked properly for about 3 days, it was 5kg that's about 8 and 3/4 ltrs of volume and a 30ltr fermentor to about 28ltr full, so maybe I'm not at the upper limit, damn stupid brain :crazy:

Yes I used Mitavite and I used a ~1:3 ratio (15 kg in 50L). I also added barley and rye (70% corn, 20% barley, 10% rye).

The corn flavour is very strong. The jury is out until I finish the spirit run.

Just finished 0.996 or around that, got about 20L yield, smelt good had a very oily film on top, not sure if it was something in the corn or the angel yeast ( I have some in a UJSSM with bakers yeast and there is a very small amount of oil on top of that)
Will post the yield from my stripping runs in a few days

I have found that washes with Angel yeast rarely puke.

The oil is from the corn. I personally have never had corn puke, but then again I put a few drops of defoamer in all my ferments…

66.67%/20%/13.33%

I was at 70/20/10 but wanted to dial back the corn sweetness a touch and increase the rye a touch will wee how this goes..

Stripped today 20L charge and ended up with 3.5L at 30abv, rough maths in my head I figure the mash was at the 7abv mark or there abouts.
Had to stop taking shots off the spout as it was early arvo and work beckons tomorrow, it tasted mighty fine :thumbup: 1 down 3 to go
