A couple of folks tested my irish whiskey
The both said it tasted like canadian club---the tests were independent of each other.--- I have absolutely no idea what that should mean to me-- I would really be interested in any input about the taste or whatever.

not knowing your recipe or how you aged ,,but traditional Irish whisky was barley malt and unmalted barley, unmalted barley will give a bit of "spicy" flavor.
then aged in used bourbon or sherry barrels , *to day they make a variety much like the rest of the world*. but the basic is still the same way but cut with straight grain alcohol after aging to lighten the flavor,as not many like the strong flavor (nor price)of a single barrel.
there it is
single barrel-- all from one barrel
single malt ---all malted barley is used in ferment
single grain-- all barley but some unmalted is used in ferment (this is what most Irish) was/is)
vatted--------- mixed from different distillers
*blended------- mixed with straight grain alcohol after aging..
then aged in used bourbon or sherry barrels , *to day they make a variety much like the rest of the world*. but the basic is still the same way but cut with straight grain alcohol after aging to lighten the flavor,as not many like the strong flavor (nor price)of a single barrel.

Again good info--ill add this to my notes-- this is an all grain mash-- is a single malt whiskey a milder one????

Yes single malt wont have the "spicy" flavor of single grain.I made single malt last year aged in heavy toasted barrel with just a handful of charcoal,
(you do not want much charcoal as this will give a smoky flavor) now cant keep the stuff. this made it to the finals of a testing board.

Just dont give up and try again...worst comes to worst, you may have to have your frinds "help" you get rid of some whiskey...then hit em with the good stuff.

its fun though-- i like making whiskey. i have written up a long method of mashing designed to get the most conversion- ill get to it eventually and will see if it yields more than the normal 7-8 % PA-- for now i have other projects-- i'm determined to finish a clean sugar wash so i can make a little vodka and gin. at least thats what i think. my 13%PA sugar wash is down to 6% PA and still fermenting strong-- i'm optimistic this time-- i used basically a method described on the mother site..the PH is running about 4 to 5-- and the SG drops a bit every day-- i have it all on record.

I hafta wonder if they were payin you a compliment... CC is a rather mild tasting Canadian whiskey that goes down easy with not a lot of burn .....If you had too much oak, I recon they'd be comparing it to somethin else.

I questioned the testers again because of the comments in this thread and you folks are correct-- they said it was smooth-- Do i like it --well guys with me thats sort of a shame-- i wouldnt know good booze from bad-- i just dont use the stuff but became fascinated with this art a couple of years ago when i stumbled across this website.

Bottom line is if YOU are happy with it.
Once in a while, I like to really heavily oak a pint, but most of the time, I try to be gentle. To me, it sounds like you have a good healthy fascination with the process and are looking for ways to improve. Let your pallette and your instincts guide you and Im sure you will come up something that will have friends not comparing it to commercial stuff, but saying "Holy Crap! You MADE this?! Can I get some to go?" My old friend said you cant make good shine without love.
When the "love comes through", thats when you will hit your mark.
Grats on making some good whiskey!

Our park manager is 80 years old and an old moonshiner from the kentucky hills, I gave him 350ml this morning--he grinned from ear to ear, gave it a shake to see the bubbles. grinned again and said with his southern accent " high proof"-- i'll get some feedback from him in a day or two but i am confident with this batch

I decided to test some myself-- i hate the taste of it by itself so i put some in ginger ale((sugar free)) still yuck. Today i put a shot in some orange juice. Better but still not enjoyable for me.
I need a suggestion for a mixed drink. Probably something folks would call a ladys drink.

You need to read the tried and true recipe section

It took me ages to come to grips with the acry... akro.... acryl..... first letter of each word bit
So never really got UJSM, SPD, BWSW, MF... sorry the last one was what I get called
Guess it means more reading Scotty
The acronyms are there and they become self explainatory.... eventually
