The alcohol is lighter then water. The SG and brix scales are for a mixture of sugar and water. When you add alcohol. It makes the liquid lighter. The same way a proof Tralles hydrometer works. More alcohol the more the hydrometer sinks. Because the liquid gets lighter.

This is why a finished ferment can finish below 1.000. Tell you the truth if it finishes at 1.000 there are still sugars present. Because the base liquid is now a mix of alcohol and water. Which will has an SG lower then 1.000.

Here. Let's figure the SG of a 10% ABV water ethanol mixture.
Water has an SG of 1.000
Ethanol has an SG of .785
(.9L x1.0) + (.1 L x0.785) = 0.9785
So the SG of a 10% ABV should be 0.9785. How often do you get one to finish that low?
But its not just a mix of water and ethanol. There are many other alcohols in there. so it will be a little off from that. Along with unfermented sugars.

Just know the SG readings from a hydrometer. Aren't always totally accurate. They get us close enough for what we need.

Kale wash is now at .989, I am pulling the plug and letting it chill down and clear... the taste is amazingly clean... very small sour hint, will let it clear and give her a run through a thumper, two plates and 36" of scoria or that's the plan at his point...

Will update it as it progresses thanks to all who are following this thread..

I'm still not sure what stopping it will do?, do you get bad tastes or something if it gets to low?. I just checked one I've had sitting for a week or so and it's right on .989 fully. Can't wait to see what you think of the finished product! :think:

That's amazing Googe that they are at the same SG ... wonder if that's typical? Man yours sure did clear up nicely... and i think this one will as well...

I havnt done a fg for ages now fully, they always turn out well so havnt been doing it till I checked last night, kind of surprised it was exactly the same as yours. From memory they usually finish around there and lower, I distinctly remember some finishing around 980, but got confused cause of what PP was saying about off readings, so maybe it wasn't that low, just reading wrong :crazy: . I'm always surprised how well it clears, that one is in a scratched up dull tube and still looks clearer than tpw's ive donelol, some look like sugar water there that clear!. All mine have cleared well like I said in the past.

NO off smell of any kind in this wash... exceptionally clean taste... slightly tart is all

The wash is still warm big doghead bubbles on it now SG still at .989 maybe .988

Wash is clearing nicely. SG still at .989 and holding even while cold.

Wash still has a greenish tint but is going translucent.

Taste is still slightly tart. There is no off smell to this wash at all.

Could run it now but will wait to see if it continues clearing.

Rinsed out the boiler in anticipation of running the wash ..... its clear with a slight green tint to it.. nothing else still sitting at .989 SG

There is nothing like a little HEADS on a saturday afternoon...

The Kale wash is a clear as can ever be... tartness has dimenished a bit no off smell. Am running 14 gallons in the first batch.

100ml of fores/heads off at this point and they taste well ... horrid like acetone really sweet. just had to do it...

Will pull 300ml and then check it again to see if most everything is cleaning up...

So far this one is running well... on thumper, 2 plates and 36" of scoria.

Am into hearts now...@2L an hour or so at 95+... i just stole 1/2 oz and cut it back to 50abv
Its got a nice flavor, flavor little to none, just the faintest hint of florals no grainyness as there is no grain in it and it has no sharp corners on it currently... mind you this is fully aged and aired for like 2 minutes but i had to give it a taste...

and on we go

The first 14 gallons are completed...

300 ml of fores and heads...

7/8 gallon of hearts @95%+...

1 1/8 gallons of tails and feints @40 abv...

So the kale wash proved out to be in the 10 to 11% wash range as it was calculated to be

Will add the tails and feints to the next run. Fores will be tossed.

Nice work fully, sounds like it went pretty well. What's the consensus on taste off the still like other washes you do?. Hope the aired product works for.you and your happy with it.

The 2 Googe's Goo Kale runs are complete. total to 28 gallons of wash. The initial SG of the wash indicated about 11% alcohol.

Here are my final numbers.

21oz. of fores/heads

2 1/8 gallons hearts @95 abv

1.5 gallons of cuts, tails and low wines @40 abv


End numbers indicate the wash produced neutral in the quantities as projected.

Product is currently airing but when diluted to 40 abv with distilled water it is amazingly clean and crisp, no biting or sharpness, mouth feel smooth, there is a small amount of sweetness that lingers at the end and a very faint floral note.

All in all i think it will be enjoyed by many as is, or it could be made into many types of flavored products.

I will update this as things develop further with the washes or finished product.

I think Googe put may have put together a winner here... give it a try...

Well my product has aired for a couple of days and its sitting at just under 95abv.
I cut 2 quarts of it down to 40abv using distilled water.

The taste is clean, crisp with no sharpness on the front or back of the tongue. There is no graininess. The finish gradually goes to sweet... with just the faintess hint of something floral... not sure if i can put the finish into words exactly but its nice...

If you decide to give this a try please post your results in this thread so others may gain on your experience.

Well done fully, you did a good write up :thumbup: . You explained well about it being clean and crisp, kind of fresh like cold water i see it. Ive never chilled it and tried it, just thought of that! Lol, thats what the russians do lol. I know that floral thing your talking about, I see it more as a earthy type hint, sort of like the kale smell when it's fresh. some washes I've done have had it and some have had it very very faint. the boiled one i did had less of that smell from memory. my last couple have had less sugar, around 4~4.25kg, which has made it better I feel, I've been lowering sugar on all my washes for a while now just to get a lower ABV. I want to try 60~80g kale next, and if that works, then I'll lower the yeast ect ect, just to try find a active medium. I want to juice the next one, and see if having no solids cleans it up even more. I want to try different yeasts to, but know bugger all about them!.

I tried it a month or so ago. I ran the Kale through a juicer,(actually I had my wife do it) I don't know how much I used, but I had 8 oz. of juice that I threw in, as well as all the pulp for 11 gallons of wash,
It took about a week and a half to ferment out and it fell pretty clear and had no kale taste at all. I can't say if the finished product had any particular flavor,'cause I stripped it and mixed those 2 gallons with a few gallons of feints I had layin around.

Glad you tried it! :thumbup: . Looks really dark green, I need to pull finger and try juicing it!. With no pulp so its nice and fine hopefully!.

I'm a little disappointed while down at the ADI conference my son planted his garden and I was hoping he would plant some kale so I could experiment with this. Now I have to talk my wife into finding a place in our small area.

Hey Googe,

Started this up yesterday, blended kale and hot water, added sugar and bread yeast to a barrel to make 23l.
Within 1.5 hours the vegetative smell was gone and replaced with floral smell.
Going at an insane pace - got to plant some more kale so i can work up a decent batch of stripped wash and then re-run for a side-by-side with birdwatchers
Where has all the rum gone? . . .

It would be (approximately) 3-4 cups of chopped kale (didn't weight it sorry) 3kg sugar, approx. 20-23L of water and 2-3 tablespoons of Edmond's active dried yeast

This sounds like something I could try.

I often grow kale, but never thought about using for brewing.

Just got to wait til growing season next year.

I have been researching and experimenting.

I have used a dehydrator to dry tomatoes and then a blender make tomato powder for a TPW.

I am now looking at the same technique to use my wheatgrass, kale, broccoli and cabbage leaves as nutrients. They all seem to have the right food source for the yeast.

It will be an interesting experiment
