Pineapple Honey Shine

Heres a pretty simple and tasty recipe for a 10 gallon run.
(3) 5 lb frozen bags of costco pineapple chunks
5 lbs of honey
15 pounds of sugar
1 pack of turbo yeast
10 gallons of water

Thaw out the pineapple, and puree with a food processor.
Add pineapple and 2 gallons of water and heat in a pot.
I heat to about 140 degrees, turn off and add honey and sugar.
Stir to dissolve ingredients.
I put 4 gallons of cold water in the bottom of my fermentor,
and then add the mix, stir, and then add 4 more gallons of cold water and stir again.
It's usually around 90 degrees at this point, cool to 86 degrees add turbo yeast and stir it in.
Ferment for 7 days and then distill.
My still is a converted 15.5 gallon keg, takes about 3 hrs to do a run.
I usually end up with 1 gallon of 110 proof, 1 gallon of 80 proof, and about 3/4 gallon of 40 proof.
