This will be something I try in the future. I will use my own Rye instead of a commercial one as per the website. The website recommends "tartaric, malic, or citric acid", but don't use malic, it seems to interfere with ester production. I also might try to use fresh lees. Make a simple sugar wash and keep the lees for this.
