What to ferment after wine transfer?

So I started wine kit this past Sunday that also included grape skins. I'll be transferring to a carboy in a week and a half or so. Not to ever want to waste anything, a bag of grape skins, yeast and whatever other kind of wine will be left in the bottom of the fermenter. What can I use to fill it back up to ferment and distill? Maybe a bunch of welches grape juice and make another cheap wine and distill that? Any other ideas?

Most of the wine kits I've seen don't contain anything but juice. However, if you do have pummace(skins stems etc) you could feed the ferment with sugar and make grappa.
