I'm working out two limoncello recipes side by side here for comparison.
recipe 1:
80 oz of 75% birdwatchers wash
22 lemons peeled without white pith
80 oz water
3.5 lbs sugar
macerate the peels for three weeks then mix in simple sugar to taste. let rest for two weeks.
recipe 2:
80 oz of 75% birdwatchers wash
7 lemons whole
4.5 cups simple syrup
hang the lemons above the liquor in a sack for one month. mix with simple syrup and rest for two weeks.
Both recipes are macerating right now. We'll see how it goes.

Howdy.
Peeled without white is the thing of a great importance here. Used vacuum for the 72-hours-maceration.
It was better than commercial limoncellos I could buy at the price of $10 in my hometown... made 3 or 4 times, the last ones as repeated orders. It's not either rum or whiskey. Anyhow, it's more the girls' portion...
