Hi all,
I just wondered if anybody remembers the old Cadbury's chocolate cream liqeur that you used to be able to buy back in the 1980s/1990s and if so are there any recipes anywhere on how one might go about making something similar? I thought about gently melting a bar of chocolate into a pan, mixing with some double/heavy cream then adding a little bit of glycerol and some sugar and adding some 40% neutral to bring the overall ABV down to around 20%? I don't want the ingredients curdling/solidifying once the mixture cools though!
The only recipes I can find tend to be on Pinterest-type sites and seem to make a spirit drink that tastes a little bit like chocolate rather than the Baileys-type consistency that I'm looking for...Ideally what I want is a reasonably thick, creamy chocolate sipping liqeur.
Any ideas/advice would be gratefully received!

You'll need emulsifiers, my friends were making and selling a very popular and good cream liqueur through their distillery. It was just basic coffee, cream and neutral. Had to get shaken and once opened it had a limited shelf life. Was very good, someone people did complain though and got freaked out because it was a shake before use type product and separated.

Thanks aircarbonarc...Do you know of anything that would work as an emulsifier? In the background reading I did before posting somebody mentioned glycerol?

I used to use coffee whitener , instead of cream , works for me
this recipe may help you
Irish crème with coffee whitener
One bottle of Irish creme essence
175 grams sugar
225 grams coffee whitener
450 grams 40% spirit
250 grams hot water
Dissolve the coffee whitener in the hot water
Zap with a blender if you get lumps
Add the sugar and dissolve
Cool
Add the spirit
Add the Irish crème essence
Keep in the fridge
I think the coffee whitener may have the emulsifier
I have made it using cold water and finely ground coffee left in the fridge over night ,
not made with essence
Kahlua clone
1.5 pounds coffee grounds
6 cups cold water. steep overnight.
filter into saucepan
add 6 cups white sugar
2 cups light brown sugar
Heat slowly just until sugars are completely dissolved (about 10 minutes) it does not need to be very hot.
filter into a 1 gallon jug
add 2 tablespoons each of vanilla extract and glycerin
top up jug with 84% a/v neutral spirits (about 1.5 to 2 quarts of spirit)
shake jug and enjoy. allow to age, if possible.
do a google to find out about dutch chocolate powder to make chocolate cream liqeur

still spirits make a chocolate liqueur with a flavour and cream base, its not too bad if you've got a good clean neutral.
