Aniseed oilin Sydney

Post by Rod »

Having a lot of trouble finding somebody who stocks

clear aniseed oil made from aniseed , not star anise

in Sydney , preferably in the west

I use it in a Sambuca recipe

or maybe a recipe using aniseeds , Pimpinella anisum

Ton of places on line, otherwise a lot of chemists and any homeotheropy store. The only thing to watch for is oil from aniseed and star anise are both called aniseed oil so check the description.

Rod, look up Artook's easy raki (here on HD). He uses anise seed, not star. His raki is way less sweet than sambuca, I am guessing his anise seed to alcohol ratio and method should get you in the right neighborhood.

Ive used both Anise and Star Anise in recipes for Ouzo and cant tell much if any difference, the main ingredient in both is anethole which is the compound that we are looking for to get this flavour.

"Star anise contains anethole, the same ingredient that gives the unrelated anise its flavor. Recently, star anise has come into use in the West as a less expensive substitute for anise in baking, as well as in liquor production, most distinctively in the production of the liqueur Galliano.]"

"Western cuisines have long used anise to flavor dishes, drinks, and candies. The word is used for both the species of herb and its licorice-like flavor. The most powerful flavor component of the essential oil of anise, anethole, is found in both anise and an unrelated spice indigenous to northern China[10] called star anise (Illicium verum) widely used in South Asian, Southeast Asian, and East Asian dishes. Star anise is considerably less expensive to produce, and has gradually displaced P. anisum in Western markets. While formerly produced in larger quantities, by 1999 world production of the essential oil of anise was only 8 tons, compared to 400 tons of star anise.[11]"

I use anise seeds, not oil, buying them in gourmet food shops, or growing them myself.

I have used star anise as a top up when I've been caught short and gotten away with it by using a lesser amount, but I've never used straight Star Anise except to make an essence for blending, which is one of the options if you have a mini pot still. My essence smelled great, but I've put it in my apothecary without ever using it to make a finished product.

It's around but it's not cheap, aniseed would be a damn lot cheaper than the oil.

Why the preference for anise seed rather than star anise?
Other people can talk about how to expand the destiny of mankind. I just want to talk about how to make whiskey. I think that what we have to say has more lasting value.
