First Bourbon

Post by MrMeaner »

Today was my first try with corn. I love bourbon so this was always my ultimate goal.
My recipe is half Booners Casual corn and half NCHooch's Bourbon.
I'm Canadian so I use metric and imperial, my scale is in grams and my mash pot is in us gallons.
10 kilos cracked corn
2.5 kilos 2 row malted barley
11 us gallons water
1 gallon C.O.B. backset

I put the corn, 10 gals of water, and .5 kilo of barley in the pot cold. I added 10mil SEBStar Alpha and raised the temp to 190f. I used a propane burner and a mounted 1/2" drill to stir. I held the temp there for 90 mins then removed the pot from the heat and wrapped it in blankets for 2 more hours. I opened it up and the heat was still 170f. I added 1 gal of cold water and 1 gal of cold backset to bring the temp to 150f and the PH to 4.8. Then I added 2 kilos of barley and 10 mils of SEBAmyl Gluco, and then I wrapped it all up again for 3 more hours.

Did you mill the cracked corn, or use it just cracked? When ground, it will improve extract efficiency at the expense of turning the “soup” to “porridge”.

Do you ferment “on the grain”, or do you lauter your mashes?

Good job. Stay safe, responsible, and discrete. And, “welcome to the club”.

Good work, MrMeaner. Enjoy!
(I'll second grinding the corn next time if you haven't done that. I grind mine to meal with excellent results.)

No I did not grind it, just cracked straight from the bag.
A big part of this hobby is buying stuff. Amazon is already flashing pictures of grinders at me.
Yes, I am fermenting on the grain.

I ran some Booners and gound the corn to a coarse meal. I stripped it and combined it with a stripping run of UJSSM. Damn it is tasty.
I could use a mop bucket like SS suggests. I fermented on the grain and it worked well.
I don't drink alcohol, I drink distilled spirits.
Therefore I'm not a alcoholic, I'm spiritual.
