Napa Cabbage vegan organic vodka
In my quest for a tasteless neutral that requires no additional additives I have come across this.
400grams napa cabbage blended in 1litre warm water
3kilo sugar dissolved in 3litres boiling water
Add this to 14litres Cold water for a total of 18litres.
Activate 40grams of bakers yeast in warm water
Pitch yeast and stir
I live on a volcanic tropical island, it takes about a week to finish off.
I'm using island mountain deep well water that has a ph of about 8
My starting OG/sg is 1.065 with a ph of 8-9
It finishes at a FG of. 990 and a ph of 4-5,
I know regional differences may vary your outcome And you may need to make adjustments to regulate ph ect. For me ,it works with just the napa cabbage alone
I've done 8 runs so far without any problems other than that in a previous run to this one I put coral in it as a safety buffer to keep the ph stable. But for me, it really doesn't need it and The smell of the coral came through and it took me 3runs to clean that smell out. Even still, the end product was OK. I suppose for those who may encounter ph issues, use something other than coral.
This is very similar to googes goo Kale wash ,except, I use napa cabbage as an alternative to Kale.
The end product is very smooth with very light flowery notes. Blends very well with fruit juices.

Very nice
Re: Napa Cabbage vegan organic vodka
Had to google the nutrition value as I am not familiar with the vegetable. Looks good and I am glad it is working for you.
Re: Napa Cabbage vegan organic vodka
I also did the comparison to kale
Re: Napa Cabbage vegan organic vodka
In addition to its nutrient value,
Napa cabbage is extremely high in caretonoids, which explains it's floral notes and sweetness

Nice work mate, I didnt mean to sound like a ass in the kale thread, I just know that threads can go way off point which confuses newbies.
Sounds like you have good results with the nappa. Very similar to kale and other washes ive done with beet leaves and veg scraps. Them comparison charts are so varied and so many have different results, I dont rely on them anymore. I go by what the end product is, as you have. Its fun finding new things to distill.
Cheers

Re: Napa Cabbage vegan organic vodka
And another 36litres is bubbling away
SG 1.060
PH 7-8
I think the high mineral content of the volcanic mountain well water as well as in addition to the very high nutrient value of the napa cabbage is the key

Re: Napa Cabbage vegan organic vodka
OK, started Jan 3rd with a SG of 1.060
Finished today Jan 9th with a FG of -.990
Stripping the first of the two buckets now
Will finish off with the spirit run tomorrow
So far, every batch has finished off within 5-7 days with this one @ 6days with fairly consistent ph and gravity values

Re: Napa Cabbage vegan organic vodka
Well I got to say this has turned out to be the easiest least complex sugar based ferment I've done. Just did a batch using some very dark raw cane sugar, after which I put in on some left over UJSSM wood chips stired in Two spoons of melted palm sugar. I'll be damned ,but it tastes like a fairly decent rum. I'm only using about 300grams of napa cabbage, 3 kg sugar, 40gram angle sugar tolerant instant bread yeast, 18 litre water and it starts at 1.060 finishes at. 990 in 5-7 days
Re: Napa Cabbage vegan organic vodka
This is now my go to easy no fail sugar wash.
Recipe update
I'm now using about 200 grams napa cabbage, 18 litres well water 3 kg raw cane sugar. 30 g angel sugar tolerant bread yeast.
This will ferment to ready in 5-7 days at 25-30 cel.
This will yield 5 litres 40% low wines so I do two of these fermentations at once to get 10 litres of low wine
I then get 6 litres with about 2+ of those being my hearts and I save the other 4 litres to run again with the next runs of 4 liters feints which gives me 8liter of feints to run again that I pull another 2+ liters from
So basically, I get 6 litres @65% for two weeks
That works out to 6 litres heart @65% from 12 kg sugar
That's 6lt for $12

Re: Napa Cabbage vegan organic vodka
OK so here's the ratio break down per kilo sugar that give a OG of 1.055-1.060 and finish at. 990
Everytime
The world's easiest sugar wash
Per 1 kg sugar
100g napa cabbage
10g sugar tolerant baking yeast(i use angle brand)
6 lt water ph6
Finishes in one week at 25-30c
I'm putting a video together .
I just started wash 100 , I do 4 a month
