Found a few historic threads here, but all seem to use the pumpkin meat.
I am wondering if you could treat pumpkin seed as a grain for mash, or even malting. I see the carbs are about 18% the only thing could be a problem is the fat content at 50%

I think the fat content you mention will not give good results. Maybe grind & boil, then cool and skim the fat off? I have no idea. Be the first one to do it and become the trendsetter maybe?
